large chicken egg 2 pcs.
protein 2 pcs.

  • We take unroasted almonds. Fill with boiling water for 20-30 seconds, until the skin on the nuts begins to swell and lag behind the kernels.

  • We drain the water. We peel the nuts: it's very simple, they literally shoot out of the skins. Remember your childhood. Who hasn't shot themselves with cherry pits ?!

  • Nuts need to be dried and practically ground into flour in a blender or coffee grinder. Do this in batches if the blender bowl is small.

  • As you know, sugar turns into powder in the same way, therefore, if there is no powder in the house, we take sugar and grind it in a coffee grinder or blender.
  • It is more convenient to grind cardamom into powder in a mortar along with salt, since the latter acts as an abrasive and speeds up the process three times. Therefore, add the prescribed amount of salt to the cardamom as you grind it. Of course, you can also use ready-made ground. But believe me, the smell of freshly ground spices is much brighter and more pleasant!
  • Finely grate the zest of one lemon.
  • Combine sifted flour, almond powder, icing sugar, zest, cardamom and salt, saffron, baking powder in a large bowl.

  • Shake 2 eggs, butter and honey in a separate bowl. It is a pleasure to measure honey in a measuring cup after vegetable oil, it just slips through the oil, and nothing remains on the walls.

  • Whisk 2 whites separately until firm peaks.

  • Preheat oven to 180 ° C.
  • Lubricate the mold or portion tins with vegetable oil (bottom and sides), add a spoonful of flour and shake it until it settles in the butter. Shake out the excess. If there are several molds, you can shake out the flour from the first into the second, etc.
  • Mix the liquid and dry mixtures and after mixing thoroughly, gently add the whipped egg whites.
  • Pour into the mold (s) filling 2/3 full.

  • Bake in the oven for about 40-60 minutes (depending on the depth of the pan). Watch the dough readiness with a wooden stick: stick it in the center and remove. If the stick returned to you dry, then the dough is baked and you can get it out. If the dough sticks to the stick, then hold it for another 10-15 minutes and repeat the check.
  • After baking, leave the pie in the form for 5-10 minutes, then gently transfer to the wire rack and cool.
  • Serve completely cooled, or better even chilled.
  • A glass of citrus or almond liqueur will come in handy!

Note

The Three Musketeers, Alexandre Dumas

“… Instead of chicken, a platter of beans appeared on the table, a huge platter, on which one could see several lamb bones, which at first glance seemed to be covered with meat.
However, the scribes did not succumb to this deception, and the gloomy expression on their faces was replaced by an expression of resignation to fate.
Madame Coqunard divided this meal among the young people with the moderation of a good housewife.

“Eat these beans, Cousin Porthos,” said Mme. Coquenard in a tone that clearly said, “Trust me, don’t eat them!”

- No matter how, I won't even touch the beans! grumbled Porthos softly.
And added loudly:
“Thank you, cousin, I'm already full.
There was a silence. Porthos did not know what to do next. The prosecutor repeated several times:
- Ah, Madame Coqunard, thank you, you gave us a real feast! Lord, how am I full!

As soon as the scribes left, Madame Coqunard got up and took out a piece of cheese, almond cake with honeyprepared by her own hand.
Seeing so much food, Maitre Coqunard frowned; seeing these dishes, Porthos bit his lip, realizing that he was left without dinner.
He looked to see if the beans were still on the table, but the beans were gone.
- Yes, it really is a feast! cried Maitre Coqunard, fidgeting in his chair. - A real feast, epuloe epularum. Lucullus dines with Lucullus ... "
