I can say about alder shavings - you will not have such smoke as in a smokehouse. Sawdust gives a slightly light, subtle taste.
I make in AG and kebab and pork ribs with the addition of shavings. There was never any smoke, but I bring the temperature to 280 degrees.
By and large, these sawdust are not needed at all - so .... play around ..
