Ingredients

chicken liver, peeled and cut into halves 450 g
soy sauce 3-5 tbsp. l.
mirin or dry sherry mixed with 1/2 tsp. sugar (I have nutmeg, I didn't add sugar) 2 tbsp. l.
rast. oil 2 tbsp. l.
green bell pepper 1-3 pcs.
green onions 4 sliced ​​arrows
garlic 1 clove, finely chopped
fresh ginger root, peeled and finely chopped 2.5 cm piece
cayenne pepper (I have regular black) 1/4 tsp
sugar 1-2 tbsp. l.
sesame oil (common vegetable) 1 tsp
strips of radish optional

Cooking method

  • In a shallow bowl, combine 2 tablespoons soy sauce, mirin or sweetened sherry and chicken liver. Leave to marinate for 20-30 minutes, stirring occasionally. Heat the wok, add oil and shake the pan to distribute the oil evenly over the entire surface. Remove the liver from the marinade with a slotted spoon and place in the wok. Fry for 3-4 minutes, until the liver begins to brown. Add green bell peppers, green onions, garlic, ginger and continue to fry for another 1-2 minutes. The livers should be brown on the outside but pink on the inside.
  • Add cayenne pepper, sugar and dark soy sauce and mix well. Drizzle with sesame oil and serve immediately, garnish with sliced ​​radishes as desired.
