Meat Under the hood at m .....

Ingredients

roast meat:
pork neck (can be chicken or veal) 700-800 gr.
tomatoes (peel and grate) 300 gr.
dry red wine 40 gr.
pinch of sugar
medium onion, finely chopped 1
clove of garlic (pass through a press) 1
nutmeg on the tip of a knife
odorless vegetable oil 2 tbsp. l.
salt pepper
for hominy (polenta):
finely ground corn flour 1 glass
water 2.5 cups
salt
form 20 cm in diameter, abundantly greased with butter. Cover the bottom with baking paper and grease too. 1 cup = 240 ml.

Cooking method

  • roast meat:
  • cut meat into thin strips, fry over high heat, add onion. Simmer for 2-3 minutes. add wine, sugar, after 2-3 minutes. add tomatoes, spices and simmer under the lid for about 15 minutes, remove the lid and cook until the liquid is almost completely evaporated.
  • hominy (polenta):
  • pour the corn with cold water, salt and put on low heat, stirring constantly with a wooden spoon, cook for 7-10 minutes. 3 minutes before being ready, add sour cream and mix everything very well, remove from heat and let stand so that the resulting mamalyga thickens slightly.
  • place 3/4 of the whole hominy in the mold, distribute the one over it,. so that they look like sides, and inside there was a depression in which to put the meat and cover on top with the remaining hominy.
  • bake in a preheated oven at 190-200aboutFrom 15-20 minutes.
  • cut the sides and turn onto a platter, serve with sour cream (yogurt), feta cheese or melted butter, very tasty with porcini mushrooms in sour cream sauce!

Tasty, fast, and most importantly, not entirely unusual serving and, importantly, the meat inside does not allow the mamalyga to cool down very quickly, the dish is juicy and aromatic!
