Ingredients

Pumpkin
bulb onions
carrot
vegetable broth / cube
dry white wine
cream 20%
vegetable oil
butter
ground nutmeg (I grate)

Cooking method

  • Bake the pumpkin in the oven for 1.5 hours. Remove the peel, cut into small pieces.
  • While the pumpkin is baking, chop the onion, carrots and fry in vegetable oil and butter. Then add peeled and chopped tomatoes there. After a few minutes, combine the vegetables with the pumpkin. After 5 minutes, add the vegetable broth (in extreme cases, it will do from a cube), so that the broth would cover the vegetables by 2-3 cm, pour out the wine and continue simmering for another 10-15 minutes. Finally add nutmeg, curry, salt and pepper.
  • Place in a mixer bowl, beat until smooth. Then pour into a saucepan, add cream, bring to a boil (but not boil) and simmer over the fire for another 10 minutes.
  • Serve with white croutons or shrimps. I boiled shrimps separately.
  • The soup is delicious and very airy

Now, according to your example, I will also try with shrimps, I also love them very much, but I did not think of connecting with pumpkin, but wine and tomatoes seem to me superfluous in this soup, but this is of course a matter of taste

A very good addition to this soup is small pieces of chicken fillet fried in olive oil to a crust, sprinkled with curry. It's just that the taste and structure of the soup itself is velvety and tender, and the chicken sets them off great.
