filling
chicken or turkey meat 1 kg

Cooking method

  • “Three familiar snipe flew over the sedge, and in their squeak there was anxiety and annoyance that they had been driven from the stream. The horses chewed and snorted sedately; Deniska walked around them and, trying to show that he was completely
  • indifferent to the cucumbers, pies and eggs that the owners ate, all plunged into the beating of horseflies and flies that stuck around the horse's bellies and backs. He appetizingly, uttering a special, viciously victorious sound with his throat, clapped at his victims, and in case of failure he grunt in annoyance and watched every lucky man who escaped death with his eyes.
  • - Deniska, where are you there! Go eat! - said Kuzmitchov, sighing deeply and thus letting him know that he had already eaten. Deniska timidly approached the felt and chose five large and yellow cucumbers, the so-called "yellow cucumbers" (he was ashamed to choose smaller and fresher ones), took two baked eggs, black and cracked, then
  • hesitantly, as though afraid that he would be hit on the outstretched hand, touched the pie with his finger.
  • - Take it, take it! - Kuzmichov hastened him.
  • Deniska resolutely took the pie and, walking far to the side, sat down on the ground, with his back to the chaise. Immediately such a loud chewing was heard that even the horses turned around and looked suspiciously at Deniska.
  • After eating, Kuzmichov took a sack with something from the chaise and said to Yegorushka:
  • - I will sleep, and you keep an eye so that this bag is not pulled out from under my head.

  • Knead the dough from the specified products. Let stand while we prepare the filling.
  • For the filling: Finely chop the meat, and och. thinly potatoes and onions in half rings. Add cilantro, pepper, salt, garlic, lavrushka, stir and marinate for 15 minutes.

  • Jung-ju (chicken in the dough)

  • This dish must be cooked in a steam bath. If there is a large cooker (like mine), then it is possible in it, although the cooking time then increases from one hour to two. The pie should not cover all the holes in the mantle pot !!! Otherwise he won't get ready !!!

  • And the best way is: pour a little water into an enamel bowl, place a bowl in the center and put it on fire. Put the dough rolled into a layer on a baking sheet or dish of a suitable size, spread the filling on it, wrap the edges of the dough to the center and seal in a circle, leaving a small hole, put pieces of oil on top of the filling. then put the dish on a bowl. Cover the top with the same basin, and wrap a towel around the gap. Cook over medium heat for 1 hour.

  • An incomparable pie! Like everyone without exception, both adults and children, unlike a baked one, it does not have crusts, which will be appreciated by both old and young. The pie will turn out to be large - 35-40 cm in diameter.

  • Bon Appetit!

Eh, yes with a cucumber!

Here, it turns out, what kind of pies are found in the steppe ... Incredibly interesting. That is, if I understand correctly, this pie is steamed, as it were? Then a multicooker can be adapted for it, probably?

Yes, the cake is steamed. Sorry, I can't say anything about the multicooker ... I've never seen her in my eyes ...

Then a multicooker can be adapted for it, probably?
Ikra, do not even hesitate, of course you can, I have baked yeast bread and pies many times in a multicooker, an excellent result !!! The main thing is not to miss the size ...
Ikra
Krosh, as I understand it, you need to make much smaller than the circumference of the steamer in order for it to steam normally? Does this cake rise strongly during cooking?

Ikra
To begin with, I would recalculate the portion of both the dough and the filling to a smaller size, otherwise the pie simply will not fit in the steamer basket, well ... at least it seems to me ...
Ikra
Crumbmuch less! I have a 2.5 liter cartoon. (Now I understand that even for two it is too small.)
Or just divide everything into two or three servings.
alina-ukhova, and eat them with sour cream? Or are they self-sufficient?
alina-ukhova
Ikra, please forgive me for noticing your question on time. I answer: in general, this pie is self-sufficient, you can, of course, with sour cream, but mine prefer something spicy to this pie - the same cucumbers, Korean carrots on top, horseradish or mustard. By the way, according to the method of preparation: somewhere on the internet I saw that more water was poured into a saucepan, then people put the people on top there, put pies and meatballs and then steamed them, try it, it's very tasty!

alina-ukhova , thanks, I will definitely try! It's a pity, there is a lot of work now, there is no time for thoughtful cooking. But I keep your recipe in my head, it is interesting to me.

Took half the norm, made two small pies. I cooked on a double-decker double boiler, the bottom pie 1 hour, the top one, 20 minutes more. Three people ate from the belly. Delicious
