Ingredients

dry yeast 0.75 tsp
wheat flour 300 g
milk 120 ml
water 30 ml
salt 0.75 tsp
sugar 2 tbsp. l
butter 25 g
vegetable oil 2 tbsp. l

Cooking method

  • What was the tastiest thing in childhood? I don’t know about you, but for me - pies and buns that were baked by my grandmother or mother. We did not live well then, and in stores such a variety of cotton and confectionery products had not yet been observed, so homemade cakes were always on the table, and on weekends we together sculpted buns and pies with cabbage for the whole company of relatives and friends that came to guests. It was a glorious time!
  • Not so long ago, while sorting out old magazines and notebooks in my parents' house, I came across an old, shabby notebook with recipes for various pies, muffins, homemade cakes, cookies, and so on. goodies.
  • One of the recipes, with minor changes, I'm afraid we won't eat as many rolls now as are obtained from 2 kg of flour, and I want to share with you.

  • We put all the ingredients in the bucket of the bread maker. I took dry yeast (in the original, this amount of flour would require 10 g of pressed). The "pizza" mode, after the end of the program, I left the dough in cotton, without turning off anything, for another 2 hours, during this time I manually kneaded the dough a couple of times.

  • We spread the dough on the table, divide it into 8 small pieces, form round buns, roll them a little in flour, send them to a baking sheet and leave them for proofing for about 15 minutes.

  • We bake in an oven preheated to 200 degrees for about 5 minutes, then we reduce the temperature to 180 degrees and bake until cooked for about 10-15 minutes, navigate in your oven.

  • Put the finished buns on a wire rack and let cool.

Thank you very much for the recipe. Delicious !!! baked in HP in baking mode: they are browned, otherwise they turn out pale in the cartoon. Breakfast was just great. (y) Thank you
Sonadora
Djana , to your health! Thanks for the kind words.
Ru
Sonadora, wonderful buns!
The crumb turned out exactly like in your photo. Taste - furiously milky
I made the dough on the Dough mode (who would have thought!) Plus I let it stand for another hour after the mode ended. Buns are being prepared just for one time. Eaten in the same way
Sonadora
Ru, Thank you so much! I am very glad that these simple buns are to your taste.

I am an addicted person. If I liked something, I will exploit it until I get tired of worse than a bitter radish.
Yesterday I was repeating Milk buns. In the morning they adapted them for cheese bread, and in the evening I filled them with salad and baked them. And, you know, I'll tell you - whatever one may say, buns are universal. Everywhere will come to the place!
If anyone was intrigued by the phrase about the salad, the details can be found here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=165070.0

If I liked any recipe for bread or buns, I will scoff at it and cook until I find a "new victim".

baked in HP in baking mode
And in HP, all at once and are placed or baked in several passes? Or maybe one big bun? How long should the baking mode be set?
Drooling is already flowing. I can't wait for comments, I'll go try.
Sonadora
Maribu, and what kind of bread maker? Just for Panasonic at least - 400 g of flour.
Maribu
Oh! What subtleties turns out to be. I have a Kenwood 450. Kneading already ... I'll go read the instructions for a minimum of flour.
Maribu
I did not find any restrictions in the instructions, but there are recipes for 350 grams of flour. Oh, it's hard if, before buying the stove, I did not deal with yeast dough at all. Will learn!

I LOVE simple recipes I take away to bookmarks, I hope they will be made soon

Marina, thank you so much for the bun recipe! turned out very, very tasty! Only the dough was divided into 12 parts, not 8.
Slightly changed the proportions of salt and sugar (to your taste) - 1 tsp. salt and 1 tbsp. l. Sahara.

Mine, too, require Bulkoff, but drive the oven in such heat ...

Sonadora, Marina, thanks for the recipe! Yesterday I baked it, took it to work - my colleagues ate it and licked my fingers. ))) The taste turned out great, and what is good - there are no eggs in the recipe, otherwise we have a lot of vegetarians at work, we have to adapt. ))) These buns will obviously be included in the category of "popular recipes". )))

Kneading in the "dough" mode, because there was no time to follow the timely kneading. True, the crumb turned out to be denser. Next time I'll try to add a little more liquid - our climate is much drier, flour takes more liquid. This is not the first time I notice that I have to increase the liquid if I bake according to the recipes of residents of a more humid climate. )))

Mot, and give me your recipe for 2 kg, eh?
Sonadora
Svetk, have you assembled a stove there on an industrial scale?

fresh yeast - 60 g
flour - 1850-2000 g (by batch)
milk - 1 liter (or 800 g milk + 200 g water)
salt - 20 g
sugar - 80-100 g
butter - 100 g
odorless vegetable oil - 50 g
sweetka
Mot, well, I do not like to start with a dough for 2 glasses. already do so do. so 2 kg is just right. and if you consider that I hardly eat baked goods, then, of course, I am the best friend of my friends.

Ggg we once also decided so and started a dough for 2 liters of milk for pies. I thought it would never end.

I, incidentally, do not understand for pancakes less than three liters of liquid. this is my dynamic meditation.
Sonadora
Well ... well, you can kill yourself with a broom!
sweetka
Mot, however, I fall into some wonderful state of half-prostration. Apparently, that's why I like small baked goods. but not dumplings and dumplings! for some reason I am not friends with them. and I do not like to sculpt them.

Manechka, dear, I bring you another thank you for the buns! We remember your grandma with a kind word. Give her our deepest gratitude. Your buns are sitting in the oven now, blushing. This time in my oven they rose much better ... just giants ... thoughts

I really like your recipes for white breads and I decided to bake these buns, because the recipes are always verified to the gram (they suit me in any case). Kneading in xn, but while the dough was coming up in the refrigerator, sour cream was found, which needs to be urgently attached, and the buns smoothly turned into bagels with sour cream filling, sugar and plums. oil. The recipe of course has been changed and the buns seem to be not buns, I don't know if it is possible to upload a photo (I'm still a beginner), but the dough is great! Soft, not sticky, rises well, keeps its shape - does not creep. And the bagels turned out - well, very tasty, airy, the make-up immediately straightens when pressed. We ate for three and it seemed a little: girl-yes: We need to do at least a double rate. Sugar is not very sweet, so you can sprinkle or stuff with any filling. You can bake anything based on this test. Thank you very much for this recipe. To bookmarks.

Not possible, but necessary, if you want. And we do not mind, because everyone, having looked at the photo of the other, will also want to bake.

Any shape of buns is possible. Fold into muffin pan with non-stick
cover with sour cream, sprinkle with sugar, a little plum. sprinkle butter on top, as it were, on the buns, cover with foil and in the oven for 20 - 30 minutes, at first over medium heat, then reduce, watch that the sour cream is baked. It tastes better when warm. I will also say that not every dough is suitable for this recipe (during a meal it is compressed into a piece, I don’t know how to describe it), but according to this recipe, it’s a fluff. I recommend everyone to try it.
