Whole grain bread with semola and flaxseed

Ingredients

Whole wheat sourdough (100%) 350 g
whole grain wheat flour 130 g
semol flour 70 g
water 100 g
salt 1.5 tsp
sunflower oil 1.5 tbsp. l
flaxseed 2 tbsp. l

Cooking method

  • Mix all ingredients and knead the dough. Add flaxseeds at the end of the batch. The dough will be soft, slightly smeared and stick to the bucket. Something like this:

  • Whole grain bread with semola and flaxseed

  • At the end of the kneading, which lasted 20 minutes, we leave the dough for proofing for 1 hour.

  • On the table, a little dusty with flour, lay out the dough and shape the bread. We put it in a greased form and send it to the final proofing, up to an increase of 3 - 3.5 times. It took me 2 hours.

  • Preheat the oven to 240 grams, sprinkle the loaf with water and send it for baking. For the first 15 minutes, I periodically sprinkle the bread with water, then reduce the temperature to 180 grams and bake for another 15-20 minutes.
