Ingredients

dough:
Flour 500 g
Yolk 2 pcs.
Dry yeast 7 g
Sugar 100 g
Zest 1/2 lemon
Warm melted butter 120 g
Warm milk 240 ml
Salt 1/2 tsp
Filling:
Fine-grained curd 500 g
Vanilla 1 g
Zest 1/2 lemon
Yolk 2 pcs.
Sugar 3 tbsp. l.
Corn starch 2 tbsp. l.
Butter (melt and cool) 30 g
Pitted cherries 400 g
Egg + 1 tbsp. l of water whisk-to cover on top 1 PC.
A little powdered sugar for sprinkling the finished pillows.

Cooking method

  • dough:
  • Mix yeast with flour, add all other ingredients and knead the dough, do not add flour, knead for 5 minutes.
  • Roll the dough into a ball and place in a bowl, cover with a larger bowl on top, creating a greenhouse effect (this is my favorite way to quickly ripen the dough).
  • put in a warm place, the dough should double.
  • filling:
  • Rub cottage cheese through a sieve, add yolks, vanilla, starch, sugar, butter, zest and mix everything thoroughly until smooth.
  • Knead the approached dough and divide into 2 parts.
  • Roll out a rectangle about 30x40 and 1/2 cm thick on a sprinkled table with flour and divide it into 12 pieces with a knife.
  • in the middle of each square, place 1 tsp. fillings and 3-4 cherries rolled in starch.
  • first we sculpt 2 opposite ends diagonally, wetting the sculpting end with water, then the other two.
  • place the pads on a baking sheet covered with baking paper and put to stand, covered with a towel for about 25 minutes.
  • grease with an egg and bake in a preheated oven at 190aboutFrom 25 minutes.
  • Cover the finished pads with a towel, let them rest for 10 minutes and sprinkle with powdered sugar.
