Apple chips

Ingredients

fresh apples
powdered sugar
spice mix, cinnamon

Cooking method

  • Ezidri Snackmaker FD500 Electric Dryer,
  • Medium mode (average) 50-55 * С
  • High mode (high) 60 ° C.
  • Wash, peel the apples, cut the core with seeds, for this it is convenient to use a special knife, a round tube - quickly and conveniently.
  • We cut the apples into neat slices, for which I use a Berner grater, with a nozzle for cutting thick slices.
  • We lay out the apple slices on the trays of the dryer.
  • Sprinkle icing sugar on top of the apples, for which I use a small sieve. It is better to use powdered sugar, it is finer than sugar, and quickly penetrates the apples, and dissolves until the end of the drying of the apples.
  • Apple chips
  • On some of the apple slices I spray a little spicy gingerbread mixture, you can sprinkle it with cinnamon and other spices.
  • Apple chips
  • I put the pallets on the dryer, first turn on the high mode, then after 3-4 hours I put them on the medium mode, and bring them to readiness.

Valentine
Admin, please tell me, did you put the apples in salt / acidified water beforehand ?? they turned out so bright.
Admin

Valentine, absolutely nothing with them, slicing and on pallets, powdered sugar on top and then on one side. Apparently such a variety of apples was caught. It happens that sliced apples also darken. But delicious!
Valentine
And what sort do you not remember?

And what sort do you not remember?

Oh, I was not even interested, I liked it on the market and bought it. I just remember there were big, light green, with a red barrel, with a good crunch

To your health! It's really tasty, you just need to dry it in bags.
Tasha
I made them! Delicious !!! I cut it in halves, sprinkled it with a gingerbread mixture (by the way, I make it myself, I somehow found the composition and proportions in the internet, now I pour it wherever possible and not very much ) I wish I had peeled it off. At 2 o'clock in the morning I somehow didn't want to mess with it. I dry my grandchildren without spices and sugar, completely refined. We don't eat candy. We have dry apples, strawberry chips, sun-dried bananas, ...
Thank you so much for the recipe.
Admin
Tasha, good health to you and your grandchildren!

I also noticed that dried fruits already have sufficient sweetness, and it doesn't make sense to sprinkle sugar with sugar - and it's so delicious!
Yutan
Dried crisps according to your recipe! Fortunately, there were a lot of apples this year! Well, chips, respectively! Everyone, young and old, burst. THANK YOU!!! Merry Christmas!!!
Admin

Good! Eat to health for the whole family!

Happy New Year! AND MERRY CHRISTMAS!

Tanyush, and here until ready, this is at least approximately how much?

Or is it possible to reach this only empirically?
Admin

Inna, only on our own we reach the condition. It is impossible to guess the exact time, well, not less than 10-12 hours.

How to determine readiness: did you buy dried apples in the store? These are the ones you should have soft-plastic-bend.

Nonsense
Tanya, how beautiful everything you do is! I do not get tired of admiring!
Now I'm going to dry the chips and can't figure out - how thick should I cut the apples? And dry - to crunch or elasticity?
I'm really looking forward to hearing, as I've already lathered the apples and I'm twisting my hands (and feet) out of impatience!
Admin

Natasha, we cut 5-7 mm. Thinner is not necessary, I cut the burner.
Dry to become dry and plastic - bend - but not to a crunch. There should be no moisture inside. For a reference point, you can see apple slicing-drying in the store, in the market.

Thank you! I've already cooked Berner. She ran! I will report on the results.
By the way, according to your recipes, I've dried vegetables for the soup (for the second year already!). I'm happy! They are perfectly stored under vacuum lids in a dark unheated room. There are still a few. It is very, very convenient to cook soups. I made gremolata, and peppers, and tomatoes! Your recipes are a treasure trove! Thank you!
Nonsense
I am reporting. It turned out great! Most importantly, the granddaughter liked it. I made one pallet in thin plates, I thought it would crack. But no! I won't do that anymore. Some of the apples were peeled, some were peeled. Of course, peeled tastes better. I did not do it for storage, but for now. Three hours on strong, three hours on average. The result is sun-dried apple washers. I bought these on the market and love them very much. So I was satisfied. There are a lot of apples, I will dry some more. I tried bananas on half a pallet - a miracle! And tomorrow in the morning I'll swing at an apple marshmallow (that's what it's called, in my opinion). I will study the recipe and sculpt.
Tanya, thanks again for the recipes and help!
Admin

Natasha, chew on health! It tastes better and healthier than store-bought potato chips with additives.

Not thinner than 5-7 mm. - the most normal! They dry up! In damp plates it seems "how thick it will not dry out." Will dry, be sure to dry

Oh, I did !!!! Did !!! And already half the bank is gone !!!! So we walk around in circles! What sweets, what cookies are bad when there are such things !! Doesn't even pull! We in the family announced a month without sweets, and it is these recipes that help to survive. But what is there to withstand - I just do not even want to do anything else! Admin, thank you !!!!!

Why translate lemons ..., I dissolve 1 tbsp. l. citric acid in 2 liters. water and right there I plow the apples in portions .. I use a cup with a sieve for drying greens .. I lift the sieve, put it on a large plate and put the apples on trays ...
Nonsense
Crumb, sorry, didn’t see the question. And now it’s probably too late to answer. The most unpleasant thing for me that I did was very tasty! But it seemed that it was not dry enough. I put it on for a little more - and now they are only on compote. And I like jerky more. It's good that they managed to gobble up most of it. Today I'll put it on, but I already have experience. Cut not very thinly, peel and do not overdry.

I also want to dry the pears, but there are big doubts. Do I need to sprinkle them with powder? This is already a question. Of course, to "The Most Important in Koloboks" - Tanya. Pears are partially unripe, lie down, reach. But some begin to deteriorate - maybe they spoiled themselves with their tails during transportation, maybe the birds nipped. In short, I don't know what to do with them. And it's a pity to throw it away - hefty, beautiful! Tanya, can you tell me something about how to use them.
Admin

Cut and dry!
Cut with rings or plates with a thickness of at least 5-7 mm. and lay out on pallets.
If the fruit is dense in structure, not very moist (like apples), you can lay in two layers overlapping each other.
If the fruit is very moist (like a ripe pear), then it is better to put it in one layer. When the liquid from them dries well, withers, you can connect two pallets in one - it's no longer scary, they will dry out and so on.

And further: I never practice to combine drying on several pallets during drying, and put fresh fruit on empty pallets to dry. This method sharply reduces the temperature in the dryer (fresh and cold wet fruits), the humidity in the dryer increases and those fruits that have dried out again collect moisture (from which drying can change color to gray, dark), the drying time increases - and from this all suffers from the quality of the finished product.
I prefer to completely dry the product - and only then make a new bookmark. Then the finished product will be dried with high quality, and of a beautiful color.
Nonsense
Tanya, should you sprinkle it with powder?
(I make a "burning" and at the same time start to pick up pears).
Admin

You can sprinkle a little

I just went into this topic. This year I cooked condensed milk from pears. It turns out very, very tasty. Natalya, if you still have a question with pears, then I will share the recipe in a personal, so as not to flood in the topic.

Pear "condensed milk" is not a "sister" pear "honey" ?
-Elena-
No, there is milk in condensed milk. Here is the recipe (Marina threw it off to me in PM):
On prescription:
1kg pear
1kg sugar
1l milk
1h l soda

Peel and core the pears, cover with sugar when the juice appears, simmer for about an hour over low heat, stirring so as not to burn.
Then grind the mass with a blender, add a teaspoon of baking soda so that the milk does not curl, heat, pour in the milk and cook until thickened. Hours 4-5.Pour into sterilized jars and seal.

I did it with a deviation from the recipe. We have very sweet pears, I added only 800 grams of sugar for 4 kg of pears and it turned out sweet, but not sugary. Banks are in a cool place. It's okay. The taste is something incomparable, very much like both children and adults.
If possible, you can add sour cream instead of milk, it will be fatter and more tender.
Made from apples the same way, delicious, but tastier from pears. Cook, surprise and treat!
Marika33

Tanya, I was afraid to put a recipe off topic, but now there is no time to open a separate topic, and I don’t have step-by-step photos. There is only the end result.
But condensed milk is very, very worthy to cook it. Delicious! I will also add on cooking, at first I cooked over high heat, stirring occasionally. But when it already becomes thicker, so as not to burn, it needs to be interfered almost constantly. I sit down next to me, grab a computer, watch a movie and constantly interfere. Until it reaches the consistency I need. So I prepared several portions. The output is small, with 4 kg of pears somewhere around 1.5 liters.

Natalia, I think that in a slow cooker, excess liquid will not evaporate and the condensed milk will be liquid. The principle of long-term evaporation works here.

I forgot to take a picture. Gobbled up! Four things left!
Yesterday I dried it, delicious!
Tanya, thanks!
The apples turned out to have a lemon-orange-banana-cinnamon flavor!
I'll write in oranges what I was doing here!
