Cooking method

  • I am reporting. The ice cream is already in the freezer. Delicious, girls. Solid berries are beauty, and nothing more.
  • I will rewrite the recipe so as not to get confused

  • Mix the whites by hand with fructose (sugar) with a whisk, whisk a little. Simmer in a saucepan with a thick bottom, whisk constantly, without fanaticism, for 7-10 minutes. It does not turn into an omelet, checked. I specially photographed this stage. to make it clear.

  • Remove from heat and beat until soft with a mixer. Grind frozen berries in a blender and mix with whipped egg whites. Into an ice cream bowl (for mine, the volume is too small, you can safely increase it by 2 times, just the same 7 proteins from French vanilla are sentenced), then into a container and into the freezer for an hour and a half.
  • Prepares at the speed of sound. Itself was stunned.

Incredibly delicious ice cream! Thank you! The process of whipping the whites was slightly simplified, beat with a mixer in a water bath until soft peaks, it took about two minutes. Made with a mixture of cherries, black currants and apricots, the taste is rich, the color is almost like in the photo. In terms of volume, it turned out a lot, for three squirrels my Orion was filled to capacity, and therefore it came in the freezer.

We skimmed it right away, as soon as the mass cooled down in the ice cream maker, there was nothing to put in the freezer.
