Ingredients

Cooking the marinade:
Water 1 l
Salt 50-70 g
Garlic (finely chopped) several slices
Coarsely pounded in a mortar
peppercorns - black and allspice
coriander, 1 tsp Sahara
and about 200 ml of liquid smoke
Mayonnaise
Tomato
Liquid smoke

Cooking method

  • In this marinade we soak the legs for a day (it seemed to me that the marinating time can be increased up to 2 days) Before baking the legs, grease the legs with a mixture of tomato, mayonnaise and liquid smoke (in equal parts) and bake in the oven until golden brown. I put a frying pan of water under the bottom to make it juicier.

Well, what can I say, we do not really respect chicken at home, we are more specialists in pork, but my husband's nephew loves grilled chicken, so I take pickled chicken every time I visit my father-in-law. I was tired of this bird mortally, I constantly came up with various marinades, but then it turned out that my husband adores chicken smoked meats ... The prices for them are not encouraging, and you should think about the composition (well, or better not ...) I decided on my own smoke the chicken with liquid smoke. Do not think that I am a lazy person - I smoked chicken in a real smokehouse, but this is a rather lengthy process, and not everyone has the conditions. I also understand the dubiousness of the "usefulness" of liquid smoke, but we will not eat it every day.

What can I tell you girls. If these things differ from the purchased ones, then only for the better. Sorry that without a photo - I myself did not expect that the result would be so impressive and there was no camera at hand ... Next time I will try to close up small chickens like this - and I will serve them whole ... 8 pieces ... without knives and forks. ..: girl_haha: And then I'll post the photo for sure!

In our shop "Victoria" they sell fried chickens. they are deliciously cooked and the salt and spices are my choice. And they are apparently anointed with marinade like yours. A golden crust is not visible on top and is not visible on it, but on the back side of the legs, a bit of mayonnaise with tomato is sometimes visible. This is delicious! Of course they don't add liquid smoke there. I will definitely cook according to your recipe for comparison. I have a liquid smoke called "Bonfire".
