Ingredients

Flour 300 g
Butter 200 g
Sugar 100 g
Yolks 3 pcs.
Baking powder 0.5 tsp
Vanilla 1 p.
Juice and zest of half a lemon
Apples 1.2KG
White wine 200 ml
Corn starch 50 g
Sugar 2-3 st. l.
Powdered sugar 30 g

Cooking method

  • 1. Preparing the filling:
  • peel and core the apples, rub 3-4 pieces on a coarse grater, cut the rest into large cubes. Boil the wine with lemon juice, put the chopped apples and blanch for 5-7 minutes (the apples should not boil), drain in a colander over a bowl and pour the liquid back into the saucepan. Return to the fire, put grated apples, sugar in the re-boiled wine and thicken 25 g of starch. The resulting mixture should be the consistency of very thick sour cream. Allow to cool completely.
  • 2. Prepare the dough:
  • Beat the yolks with sugar until creamy, add softened butter, vanilla, l and lemon zest and continue beating until a thick cream. Introduce flour in 3-4 steps, quickly knead the dough and distribute it in shape with dusty hands, forming a side. The dough is very flexible and easy to shape.
  • 3. Finishing the preparation of the filling:
  • Beat the whites into a strong foam, in several steps add powdered sugar mixed with 25 g of starch (without stopping whipping) and beat at medium speed for another 2-3 minutes.
  • Combine the apple-starch mixture with the blanched apples, then gently add the whipped egg whites.
  • 4. Put the filling in the prepared form with the dough and put in a heated dkhovka (160-170 degrees) for about an hour.

Note

For this cake, it is best to take hard sweet and sour apples. The filling, thanks to the wine and lemon juice, turns out to be incredibly aromatic and not too sweet. If you like it later, you can increase the amount of sugar when making grated apples.
