Gluten Free Corn & Quinoa Pancakes

Ingredients

Corn (dry kernels) 1 glass
Quinoa 1/2 cup
Honey 1 tsp
Egg 1
Olive oil 2 tbsp. l.
Kefir or yogurt 150 ml
Soda 1/2 tsp
Salt 1 tsp
Vegetable oil for frying
Water

Cooking method

  • We grind quinoa in a mill at the finest grinding:

  • We also grind the corn in a mill on a fine grind and sift through a fine sieve (cells 0.5 mm):

  • Mix all dry ingredients with the resulting flour, pour in the egg mixture (egg, butter, honey, kefir or yogurt). While stirring, add water to a thickness suitable for pancakes. Cook over medium heat in vegetable oil until golden brown on both sides.

  • Serve with jam, honey, sour cream, or maple syrup
