I baked this bread. Tastes great, but tore the roof off. And then there are a few questions:
1. Measure out kvass (dry) and bran in measuring spoons?
2. Why cover the viewing window when baking?
3. If you count kvass and bran in grams, you get kvass - 21 gr., And bran - 37 gr. Total total dry mass (flour, kvass, bran) - 549g. And for this amount, you need about 330 grams of water. Maybe that's why the roof was torn?

We measure dry kvass and bran with measuring tablespoons.

The amount of water is calculated approximately to the amount of flour or all dry ingredients.

It just needs to be taken into account that when adding dry kvass, bran, an additional amount of liquid is required and the dough must be made into a SOFT bun.

Therefore, your bread turned out to be dry and the roof was torn!

The fact is that I put all the products according to the recipe, with the exception of yeast (I poured 1.5 tsp, since I have nowhere more than 1.5 spoons used for HP, according to the description). He poured 350 ml of water. The bun turned out not 1000 gr, as stated in the recipe, but 830 gr.

1) Leave the amount of flour unchanged, dilute the concentrate in water and reduce the total amount of liquid by about 10 ml. In fact, you can not reduce the liquid, just the bun will turn out a little softer and the bread a little fluffier. This is not critical for Panasonic.

2) Add kvass concentrate to the liquid (the amount of concentrate depends on your taste and quality of the concentrate, start with the same two tablespoons). Leave the total amount of liquid as in the recipe, that is, 350 ml. Add 2 tablespoons to flour. spoons (1-dimensional art. a spoonful of flour weighs about 9g). The amount of flour will be 490 +20 (rounded) = 510g
