Sundae coffee-rum

Ingredients

Fat milk or cream 250 ml
Espresso or settled brewed coffee 100 ml
Sugar or fructose 100 g
Yolks 5 pieces
Dark rum or other aromatic alcohol 30 ml

Cooking method

  • Beat the yolks with half the sugar until light foam. I do this with a mixer with a whisk attachment at medium speed so as not to splatter. For whipping, I use a small saucepan with a thick bottom, in which I will then continue all other operations. I combine the boiled milk with the 2nd half of the sugar, dissolving it. Whisking the yolks, gradually add all the hot milk in a very thin stream. Naturally, the yolk foam liquefies. Then, without too much ceremony, without any water bath, I put the pan on medium heat and, without stopping whipping at medium speed, I bring the mixture back to a thick foam. This happens much faster than in a water bath.
  • I remove it from the heat, close it with a lid so that a film does not form on the surface, and leave it to cool in a container with cold water.
  • I make coffee and cool it too. I add rum to the cooled coffee.
  • When the ice cream mixture has cooled down, little by little, literally a few drops, pour the coffee into the mixture, stirring constantly. This is necessary in order to prevent the foam from stratifying into liquid and foam. Do not be lazy, and you will get ice cream of excellent consistency.
  • Sundae coffee-rum
  • It took 50 minutes to cook in the ice cream maker - a consequence of the rum additive, if done without alcohol, it will take 35-40 minutes.
  • It tastes like rum ice cream and crème brulee at the same time. Simply divine!

This ice cream according to the original recipe (from the book for the Delongy ice cream maker) is made on raw egg yolks. I am suspicious of this method, so I brew the yolks with hot milk, and precisely with milk, since cream and even yolks with frequent ice cream will help you quickly switch to the next clothing size. And I also traditionally reduce the amount of sugar, because according to the original recipe it turns out too cloying (130 g).
