Zurich Pastor's Apple Pie

Ingredients

Flour 150 g
Butter 85 g
Sugar 60 g
Yolk 1 PC.
Cottage cheese 220 g
Sour cream 65 g
Egg 1 PC.
Vanilla 1 p
Sugar 150 g
Yolks 3 pcs.
Proteins from 4 eggs
Almond 200 g
Lemon juice 1 tbsp. l.
Corn starch 50 g
Baking powder pinch
Apples 700-800 g

Cooking method

  • 1. Grind the yolk with sugar (60 g), add butter (85 g) and beat until creamy. Add flour and knead quickly. Gather the dough into a ball and distribute it with your hands, forming a side with a height of 2-3 cm.
  • 2. Rub the curd through a sieve (or use a hand blender). Beat with egg, sour cream and vanilla. Spread evenly over the dough.
  • 3. Peel the apples. Grate one apple on a coarse grater. Cut the rest into 4-6 pieces. Beat the egg yolks with sugar until they become thick foam. Add lemon juice and grated apple to them. Then stir in the almonds, ground and mixed with starch and baking powder. Beat the whites into a strong foam and combine with the almond-yolk mass. Place on top of the curd. Carefully arrange the apple quarters on top, pressing the segment into the almond filling.
  • 4. Put in an oven preheated to 180 g for about an hour (until a dry speck). Sprinkle the finished cake with icing sugar.
