Cooking method

  • We cook broth from the head, ridge, caudal fin. While the broth is cooking, sauté the onion with the addition of tomato paste. There should be a lot of onion, it constitutes the main density in the hodgepodge. When the broth is cooked, we take out the head and everything that was cooked with it, filter the broth, disassemble the head and others like it, put it separately in the broth, bring to a boil, put the pieces of fish, cook for 10 minutes, put the onion salted with tomato paste , capers, olives, olives, bay leaf, add salt, if necessary, and cook for 5 minutes. Everything, our hodgepodge is ready.
  • Pour salt into a plate, add a slice of lemon, sour cream and ... Bon appetit!
