Wheat bread on kefir with egg in a bread maker

Ingredients

dry yeast 1 tsp
Wheat flour 400 g
salt 1.5 tsp.
honey (or sugar) 1 tbsp. l.
kefir 3.2% 170 ml
egg 1 PC.
olive oil 1 tbsp. l.
water

Cooking method

  • Break the egg into a measuring cup, add water to 100 ml and stir. Place all ingredients in a bread maker. Bake in “Basic” mode, size M, medium crust (for Panasonic SD-255).
  • Part of the wheat flour can be replaced with rye flour (about 100 g). Then you get gray bread.
  • Be sure to keep an eye on the kolobok, the last time I had to add 3 tbsp. l. water.

Note

The bread turns out to be salty, my family loves it. If desired, you can reduce the amount of salt to 1 tsp.

The bread is wonderful. Instead of water, I put whey and butter instead of olive oil. The bread has risen to the edge of the bucket (for 450 grams of flour), immediately after baking, you can smell an egg-milk smell.

As for me, it does not matter at all which oil: refined olive, unrefined. I generally put on the creamy one. And the taste did not suffer from this, and, perhaps, even improved.

unrefined taste and smell are harsh, many do not like it, refined in this regard is much more pleasant

I always bake bread with sour milk: kefir, yogurt, whey, depending on what is in the refrigerator. The taste is completely different on water or milk. I add olive oil, it gives some rubberiness and does not crumble when slicing. The bread is tall and beautiful.

Yesterday I baked bread according to this recipe. This is just super bread. Baking in a cold storage Breeze-11 .. On the dough mode, kneaded, formed a bun and 30 min. stood there. I switched to the Normal mode and baked bread on it. I like long-proofed bread, it tastes better than the regular setting. About calculating the liquid in it: in recipes for Panasonic, for 400 g of flour, 280 g of liquid is taken as standard.
170 g kefir + 60 g (category 0) or standard 50 - 53 g (category 1) egg = 230 g maximum. Honey won't add much liquid. Therefore, apparently the author added water to the recipe.
