Kefir buns with raisins

Ingredients

Wheat flour 380g.
Kefir 160g.
Pressed yeast 11d.
Sugar 3st. l.
Egg 1pc. (50g.)
Butter 60g.
Salt pinch
Raisins 100g.
For lubrication:
Egg 1 PC.

Cooking method

  • Grind yeast with 1 tbsp. l. Sahara.

  • Add kefir, egg, melted and cooled butter, flour, salt, the remaining sugar to the yeast. Knead the dough. In the combine at high speed for 7 minutes. The dough is soft, sticking to the sides of the bowl.

  • Put the dough on a silicone mat, slightly oiled with vegetable oil (if necessary, grease your hands with oil as well). Form a ball, place in a container greased with vegetable oil, cover with a bag and put in a warm place for 1 hour. I put it in the off microwave, with a mug of boiling water.

  • Rinse and dry the raisins.

  • After a while, put the dough on a silicone mat and knead the raisins with your hands. The dough will tear at first. It is necessary to knead until the dough is soft and the raisins are evenly distributed.

  • Then again form a ball, put in a container greased with vegetable oil, cover with a bag and put in a warm place for 1 hour.

  • After a lapse of time, knead the dough, divide into parts. I divided it into 8 parts 100g each. Cover with a towel and leave for 15 minutes.

  • Next, form a bun from each part, put on a baking sheet covered with paper, covered with a towel and leave for 30-40 minutes.

  • Brush with egg before baking.

  • Bake in an oven preheated to 220C for 10 minutes, then lower the temperature to 200C and bake for another 5-10 minutes until golden brown.

  • Cool on a wire rack.
