Lemon Banana Cheesecake

Ingredients

for the base:
biscuits 200 gr.
butter (melt) 100 g
cream:
cream cheese type 600 gr.
light honey 4 tbsp. l.
cream 35% 300 gr.
powdered sugar 2 tbsp. l.
lemon zest 1 tsp
bananas 3 large
gelatin 5 gr.
lemon juice 2 tbsp. l.
coarsely grated dark chocolate 100 g
shape or ring with a diameter of 22-24 cm.

Cooking method

  • the foundation:
  • mix the butter with the cookie crumbs and press well onto the bottom of the mold. put in the refrigerator and allow to harden.
  • cream:
  • soak gelatin in cold water and heat lemon juice to 90aboutFROM.
  • squeeze out the gelatin and dissolve it in lemon juice.
  • mashed bananas. add a gelatin mixture to them. stir well and place and refrigerate. to give the banana puree a light grab. Attention! don't let the puree turn into jelly!
  • Whip cream cheese with honey. in a separate container, beat the cream with sugar. powder until firm peaks and combine both mixtures together.
  • add the zest and slightly hardened banana-lemon puree to the resulting cream. mix well until smooth.
  • place the cream on top of the cake and put the mold in the refrigerator overnight.
  • decorate the top with grated chocolate and warm the sides with a hair dryer. free the cheesecake from the mold.
  • you can put the cheesecake in the freezer and then we will have a wonderful cheesecake ice cream.

Natapit, do not disregard my questions, plizz. I want to reproduce such a yummy ochchchen. To the previous question, if possible, I will add more:
1. When I add even one banana, I get a mass of creamy color. Yours is just snow-white. Are there any secrets?
2. All of your cheesecakes are made cold. Will the taste change greatly if done with eggs in a water bath (American version)?

Why complicate things? :) you can, but then everything needs to be ground and reshaped again, the base should just melt in your mouth! any recipe for crumbly shortcrust pastry will do, I don't have that.

one.I take slightly unripe fruits and process them very quickly, they should not be peeled and immediately added to the cream.
