Champignon 300-500 g
Carrot 1 PC
Bulb onions 1 PC
Garlic 3 tooth.
Fresh greens
White wine OK. 50 ml

Cooking method

  • There are many similar recipes on the Internet. If suddenly absolute coincidences are found, I do not pretend to be authorship, here I describe the dish as I cook myself.
  • Chop the champignons, fry in vegetable oil and remove from the saucepan.
  • Then fry two cloves of garlic crushed with a knife in vegetable oil (for aroma) and remove them. Then fry the onions and carrots in the same place, add dry rice and, stirring, let it soak a little with oil. Add white wine, stir. Season with salt, pepper and seasonings to taste.
  • Then gradually add hot water or broth, stirring occasionally, until the rice is ready. Then add the fried mushrooms, fresh herbs, finely chopped clove of garlic, and if necessary, water / broth. And cook for a few more minutes.
  • And it is advisable to serve immediately, although the next day the heated dish was also tasty, only the rice became drier, since all the liquid was absorbed during cooling.

We also got hooked on risotto lately with my husband. I haven't done it with mushrooms yet, I'll try. In general, it is a very good cooking method for rice. I also add a slice of butter at the end, then it (risotto) is more creamy and the cheese is hard, too.
