Ingredients

Whole wheat flour 6.75 hrs
Water 1.5 hrs
Salt 1 tbsp. l. + 1 tsp
Honey 0.5 h
Rast. oil 5 tbsp. l.
Warm milk 1.5 hrs
Yeast 1.5 tbsp. l.
(1 tbsp. L. = 9 g)

Cooking method

  • Knead the dough. The dough can be kneaded by hand (water is added last). And put the fit. It takes 2 to 5 hours. Depends on the room temperature. Then you can bake or put in a container in the refrigerator for 2-3 days. The container is needed with holes so that moisture does not accumulate. The taste of the bread depends a lot on the honey and the aging time.
  • One portion makes 1.2 kg of bread. At home, I often make a 600g roll (half a serving). Proofing time for half a portion is 1 hour. 20 minutes before baking, I turn on the oven 180 degrees. Be sure to put a container with one cup of water down. Baking time is about 1 hour (for half a serving). When you knock on bread with the edge of a knife, the bread makes a dull sound. Let the bread cool well.
