Frangipan plum pie

Ingredients

DOUGH:
Butter 100 g
Powdered sugar 80 g
Egg 1 PC.
Wheat flour 200 g
FRANJIPAN:
Eggs 2 pcs.
Sugar 120 g
Butter 50 g
Chopped almonds 120 g
FILLING:
Plum (apricots) 10 pieces.

Cooking method

  • For dough - beat butter with powdered sugar. Continuing to beat, add eggs one at a time, then flour.
  • Wrap the dough in foil and refrigerate for 30 minutes.
  • For frangipan (thick almond cream), beat the eggs with sugar. Add finely chopped almonds and butter. Mix everything and refrigerate for 30 minutes to thicken the mass.
  • Preheat the oven to 180g.
  • Cut the plums in half and remove the seeds.
  • Put the dough in a mold (I have d22cm, h2.5cm), oiled. Spread with your hands along the bottom, make sides.
  • Place the frangipan on top.
  • Place the plums on top, pressing them down.
  • Bake at 180C for 15 minutes, then lower the temperature to 160C and bake for about 20 minutes until golden brown.

The cut was not photogenic at all, because it was cut warm and the plum tried to crawl out all the time. But this did not affect the taste! The only thing, on my own, would reduce the amount of sugar in frangipane.

Today, while I was buying food, I changed my mind twenty times what to bake: this Frangipanza or with peaches from the Deli School. Because of the agony of choice, I bought peaches and plums just in case. Peaches now have to be eaten "alive", but plums have turned into an amazing yummy! And how delicious the first bite after an honest three-week diet without a bite of sweets!
