Hepatic flan

Ingredients

for the basket:
butter 125 gr.
flour 250 gr.
1 egg + 0.5 eggs for lubrication
salt 1/4 tsp
some black pepper
For filling:
chicken liver 200 gr.
white part of green onions 60 gr.
garlic 1 clove
chopped fresh herbs (basil or marjoram) 1 tbsp. l.
nutmeg on the tip of a knife
cream (fat content does not matter) 250 ml
1 egg + 0.5 eggs
water 1 tbsp. l.
light raisins (optional) 1 tbsp. l.
cognac (optional) 1 tbsp. l.
form 20-22 cm in diameter. cover with baking paper. for portioned flans 12 silicone molds and 1/2 of these ingredients.

Cooking method

  • basket (baskets):
  • Beat butter at room temperature with egg and salt until an airy cream is obtained.
  • Sift flour with pepper. add oil to it and quickly knead the dough.
  • Spread the dough into a disc. wrap with cling film and refrigerate. at least 30 minutes.
  • Roll out the dough thinly between two sheets of baking paper.
  • Transfer the dough into a mold and press gently against the walls. especially in the corners.
  • Remove the mold with the dough in the refrigerator for 15 minutes.
  • Put the form in preheated to 180aboutFrom oven and bake until dough is done. Cool to room temperature.
  • Put the raisins in a saucepan. pour water and brandy. boil. Throw the raisins in a colander and squeeze. Save the liquid.
  • Preheat oven to 160aboutFROM.
  • Beat the egg. grease the inside of the basket. Place in oven and bake for 2 minutes.
  • for flan filling:
  • In a blender, prepare a homogeneous puree from all of the above for pouring. plus the rest of the egg (from the basket smear). plus brandy with water left over from raisins.
  • Remove the basket from the oven. pour raisins on the bottom. pour out the filling and return to the oven. Bake for 30 minutes. portioned baskets 15 min.
  • You can also bake portioned flans. for this I used small silicone molds for 12 pcs. took exactly half of these ingredients.
  • And further. I just baked the flan myself without dough. It is amazingly tender and delicious!
