Sourdough rye bread

Ingredients

Water 500 ml
The oil grows. 2 tbsp. l.
Malt 4 tbsp. l.
Leaven 350 g
Rye flour 600 g
Gluten 60 g
Salt 1.5 tsp.
Coriander, ground caraway mixture 2 tbsp. l

Cooking method

  • Mix malt with coriander and caraway seeds, brew 100 ml. boiling water.
  • Put everything in the bucket of the bread machine according to the instructions for your bread machine.
  • Turn on the "dough" mode, while kneading, help with a spatula, since the kolobok, as such, does not work.
  • Let it come up until it increases by 1.5-2 times no more, otherwise the roof may fall through during baking.
  • Bake in the "baking" mode for 1.5-2 hours. If there is not enough time, turn on the mode again.

Probably, it rose more for you. Keep in mind that in HP the smooth heating and at the beginning of baking the bread will still rise. Turn on the "bake" mode a little earlier.

Can you tell me if you can make bread if you don't add gluten?

Have not tried it.
Probably it will work, just at a higher rise the roof may fall through.

Don't worry, it comes out very good and gluten free. Gluten is added to bread to reduce the cost of its production, because its use makes it possible to produce quality bread from low-grade, cheap flour.
