Ingredients

beet 600 gr.
balsamic vinegar 1.5 tbsp. l.
thick yogurt 250 gr.
dill 1 tbsp. l.
coarsely chopped walnuts 1.5 tbsp. l.
olive oil 1.5 tbsp. l.
salt. white pepper.
for nut-garlic cream:
white bread crumb (soak in water and squeeze well) 120 g
ground walnuts (not flourish 50 gr.
garlic 3 teeth
olive oil 4 tbsp. l.
vinegar 1 tbsp. l.
salt. nuts for decoration
culinary ring 15 cm in diameter or molds for portioning.

Cooking method

  • boil the beets in salt water. clean (I do this under running cold water) grate on a coarse grater. add vinegar and place in a colander to drain well.
  • mix yogurt with herbs. spices and nuts.
  • cream:
  • cut the chives in half. remove sprouts and simmer lightly in oil.
  • punch in a blender with nuts and half the bread. gradually adding butter and remaining bread. add salt and vinegar.
  • assembly:
  • place the culinary ring on the dish.
  • 1st layer - grated beets
  • 2nd layer yogurt
  • 3rd layer cream
  • 4th layer beets.
  • release the cake from the mold. decorate with greens. nuts and "roses" from the cream. which to squeeze out with a cooking syringe.

sweetka... of course. thick Greek yogurt. but it can be made thicker at home. Remember how we squeezed out sour cream through 2-3 layers of gauze? as a last resort, you can cook with low-fat thick sour cream.

Irish... I would not recommend doing this. that's the whole point. combining yogurt with beets and a layer of cream. it's like two different creams in a cake. but not mixed. which create a feast of taste. and yogurt should be taken thick or strained. like sour cream once!
