Ice cream-sorbet "Yogurt-kizil"

Ingredients

Natural yoghurt 250 ml
Sour cream 4 tbsp. l.
Vanilla 1 pod
Egg 2 pcs.
Honey 2 tbsp. l.
Chopped candied fruits 4 tbsp. l.
Chopped almonds 1 tbsp. l.
Dogwood (puree) 200 ml
Pomegranate juice 200 ml
Powdered sugar 50 g

Cooking method

  • It's no secret that yoghurt and berry ice cream is a great choice for those who choose light, low-fat desserts for dietary reasons, or are indifferent to the usual sweet, creamy ice cream.

  • I am just one of the last, which I have already mentioned in the recipe for Ice Cream Cake Lemon.

  • Here's one of my basic sorbet ice creams. On this basis, you can combine many tastes, experiment!



  • 1. In a saucepan, mix thick yogurt with sour cream, put a vanilla pod or vanilla sugar.
  • Put on medium heat and bring to a boil. Remove from heat immediately. Take out the vanilla pod.

  • 2. Pour the eggs into a heat-resistant container and place in a water bath and beat vigorously with a whisk until the mixture thickens. Without stopping whipping, pour in the yoghurt-sour cream mixture in a thin stream.
  • I use a milk cooker (with boiling water between the double walls) instead of an open water bath.

  • 3. Remove from heat, add honey, stir, cool to room temperature.
  • After that, put the mixture in the freezer for 3-4 hours.

  • 4. Prepare the berry portion of the ice cream.
  • Rub the dogwood berries (now you can buy wipes from inexpensive mechanical wipes to harvester attachments in regular and online stores, I was lucky - Kenwood wiped it for me).
  • Beat the dogwood puree, pomegranate juice and icing sugar with a blender (adjust the sweetness to your liking).
  • If you have special ice cream molds that stand upright, then the next step is to “assemble” the ice cream.
  • And if there are no molds, then to combine the berry and yoghurt parts, it is necessary to freeze the berry so that both mixtures are close in density, but of sufficient viscosity to combine.
  • Then you can lay them out in layers in bowls, glasses or any shape of your choice.

  • 5. Take out both frozen mixtures. Add zest, candied fruits and almonds to yoghurt and mix.
  • "Collect" ice cream: down - yoghurt, then berry. The thickness of the layers-interlayers - to your taste, you can make only two layers, as in the photo, or you can make a colored zebra ...

Unfortunately, I don't have an ice cream maker and I don't know the intricacies of cooking in it.
In the recipe, the separate preparation of the yoghurt and berry parts is due more to aesthetics - the white and red layers look beautiful Although there are also taste nuances: first you enjoy one ice cream, then the berry sorbet

So you can try mixing, why not - if time is short. And when you have the opportunity, try as in the recipe and compare
