  • I choose fresh tomatoes of medium size, very ripe, with an even dense pulp, evenly colored. when dried, the tomatoes are very dry, and if you take loose tomatoes, then in the finished product we will get only shells.

  • Wash the tomatoes, dry them with a towel, cut out dark spots, places from the roots.
  • We cut tomatoes in a vegetable cutter in even circles. I do not recommend cutting thinly at all, they will dry out and stick to the mesh tightly. I use a Berner grater, manual cutting of tomatoes is better, keeps the integrity of tomatoes and less traumatic for tomatoes, less juice production.
