Ingredients

zucchini (small) 1 PC.
eggplant 1 PC.
carrot 1 PC.
bulb 1 PC.
garlic 5 teeth
cauliflower 1/3 small head of cabbage
red bell pepper 1 PC.
tomato 5 small
ground pepper (I took a mixture of peppers from the mill)
Provencal herbs
salt as needed, since the marinade contains soy sauce (!)
Marinade:
Vegetable oil 4 tbsp. l.
Garlic 3 tooth. (Squeezed out through the press)
Vinegar (balsamic) 1 tbsp. l.
Soy sauce 2 tbsp. l.

Cooking method

  • A very simple and delicious recipe for cooking vegetables. You can take any vegetables - to your taste or whatever you find in the refrigerator or in the garden ...

  • Chop the vegetables randomly, but not finely, put them in a plastic container, sprinkle with dry herbs, salt (my soy sauce is not very salty) and pepper. Combine all marinade ingredients in a bowl.

  • Pour the vegetables over the marinade, close the container tightly with a lid and shake well so that the marinade is evenly distributed. Leave to marinate for 1 - 2 hours (you can overnight). During this time, you can shake the vegetables a couple of times. Then place on a baking sheet lined with baking paper.

  • Oven vegetables

  • Bake at 190 degrees for 40 -50 minutes (depending on what kind of vegetables you like - I love when they crunch a little) .... Stir the vegetables once (turn over) during baking.

  • Such vegetables are very tasty on their own, but you can use them as a side dish for meat, poultry, fish.
