Ingredients

Butter 110 g
Powdered sugar 40 g
Yolks 110 g
Almond flour (ground almonds) 90 g
Protein 110 g
Sugar 100 g
Starch 25 g
Flour 110 g
Starch 50 g
Plums (apricots) 350-500 g
Vanilla 1 p.

Cooking method

  • 1. Beat butter at room temperature with powdered sugar and vanilla until creamy.
  • 2. Beat the yolks with 2 teaspoons of sugar (take sugar from the total amount) white and mix with almond flour. Add almond flour in several stages, gently kneading.
  • 3. Mix sugar with 25 g of starch. Beat the whites with a pinch of salt, add the sugar-starch mixture in 5-6 doses and continue beating until shine appears.
  • In this case, starch is added when whipping the whites so that the cake remains uniform and does not form a crust that separates during baking with a dome.
  • 4. Combine the yolk-almond mass with whipped butter, gently stir in the whites, gradually add flour mixed with 50 g of starch.
  • 5. Put the dough into a mold, spread the plum halves, cut up. Spread not very tightly to allow the dough to rise. Sprinkle with almonds (optional). Bake at 180 degrees for about an hour. Sprinkle the finished cake with icing sugar.

This cake can be baked not only in the form, but on a baking sheet. In this case, it is better to use baking paper. For sheet baking, you can leave the same number of ingredients, or you can increase it by 2 times - you get a big cake. Bon Appetit.
