Argentinean cookies Alfagores (Alfajores argentinos)

Ingredients

for 12 pcs. diameter 6 cm.
dough:
oil sl. room temperature 100 g
sugar 3/4 cup
an egg 1
yolk 1
cornstarch or very fine cornmeal 1 glass
flour 1 glass
baking powder 1 tsp
vanilla sugar 2 tsp
cognac or brandy 1 tbsp. l.
lemon peel 1 tsp
Dulce de leche cream or boiled condensed milk 200 gr.
for sprinkling - coconut flakes. chopped almonds.
for glaze:
chocolate + butter / for 2 cookies 20 chocolate + 10 gr. oils /
1 glass = 200 ml.

Cooking method

  • dough:
  • sift the flour together. starch and baking powder.
  • Beat butter with sugar until creamy. while continuing to beat, introduce the eggs. vanilla and cognac.
  • add zest. flour mixture and knead a tender dough that does not stick to your hands. if necessary, you can add 1-2 tbsp. l. flour. Roll 2 balls and place the dough in the refrigerator for 30 minutes.
  • divide each part of the dough into 12 parts and roll the balls into the refrigerator.
  • gradually taking out the dough. roll it out with a slightly larger diameter. than a glass to squeeze out the circles for them and immediately place them on a baking sheet covered with baking paper. / You can roll out the whole dough. but it melts quickly. sticks and loses shape.
  • bake at 180aboutC in a preheated oven for 8-10 minutes. do not overdry otherwise the cookies will be hard.
  • remove the finished cookies immediately from the paper. because it can stick to it and cool on the wire rack.
  • assembly:
  • place in the center of the cookie 1 tsp. cream and covering others. Gently press down in the center. so that the cream comes out on the sides and, having smeared the sides in a circle, sprinkle them with nuts or shavings. can be coated with chocolate icing. but this is no longer a classic!
