Salad cabbage

Ingredients

Head of cabbage 1.2-1.5 kg
Carrot 1 PC
Onion 1 PC
Vegetable oil (any) slightly more than half a glass (about 70-75 grams)
Apple vinegar 50 g
Sugar 1/3 cup
Salt 1 tbsp. spoon (with a slide)
garlic 4-5 teeth (medium size)
water (for marinade) 400-500 gr

Cooking method

  • Chop the cabbage and mash it slightly with a small amount of salt, do not try to extract juice, but only until it crunches slightly.
  • Grate the carrots, cut the onion into quarters of rings (I take the salad, red onion, but you can also use the usual one). Stir in kale and place in a large saucepan or other container.
  • Pour salt and sugar into the water and bring to a boil. Immediately pour in vinegar and oil and add the chopped chasnok to the marinade (Chop the chasnok finely and finely (do not pass through a press, it will then form a foam).). Stir with a spatula, not very hard.
  • Cover the cabbage with a smaller dish (lid, plate, cutting board) and put a slight oppression, not very heavy, before the marinade appears on the lid (you should not cover the entire lid with the marinade) and leave for a day. I put it in a room under an air conditioner, in this heat it threshes almost constantly, and in the fall it is good to leave it just at room temperature. Then put the cabbage in a jar and refrigerate.

  • It keeps well and does not turn sour like a bazaar one.

I read this recipe in some magazine a long time ago, when I was on maternity leave with my eldest son. I'm not a big fan of cabbage, but I really liked this one. And my husband appreciated it. And now the kids love too. I don't do a lot at once, because you can't save enough space in the refrigerator, since there are cabbage and carrots all year round. Sometimes I also add a little sweet bell pepper. But it is stored worse with pepper, you should not do much.

My husband is already eating it on the second day.

Oh yes, choose a harder head of cabbage and everything is ok! And most importantly, at the very beginning, do not crush very much, and so on until a slight crunch. Then it won't be soft.
In preparation, it is unpretentious, I do not like shredding cabbage, I would rather peel potatoes for a company, sometimes I involve my husband and son in this occupation. Cope ...

I do not know. The experiment, of course, can be done.I tried it with pepper. Doesn't spoil the taste, but cabbage is stored worse than without it. A couple of apples can be used for another purpose. And about beets, let's say I know, that's all. The salad will be colored. But will it give a zest to the taste?
