Gooseberry pie

Ingredients

Dough:
Flour 400 g
Sl. oil 150 g
Powdered sugar 100g
Baking powder 1 tsp
Egg 1 pc + yolk 1 pc
Filling:
Gooseberry 400 g
Sugar 125 g
Protein 4 things
Ground almonds 100 g
Zest of one lemon

Cooking method

  • 1. Sift flour, icing sugar, baking powder, mix everything, add sl. butter, egg and yolk, knead the dough (first with a spoon, then with your hands), roll a ball out of it. (If the crumb does not want to roll into a ball, then dip your hands in cold water). Place the dough in the refrigerator for 1 hour.
  • 2. Roll out a cake out of 2/3 of the dough (I couldn't roll it out, I just kneaded it with my fingers in a mold), put it in a mold with a diameter of 25 cm, make sides.
  • 3. Beat the proteins with a mixer in a strong foam, add sugar, almonds and zest grated on a fine grater, everything carefully mix (it was in this place where the light presentation began !!! I sit, it means I ... whisk ... The whites whipped perfectly ... There are sugar and almonds prepared for falling asleep on the table, and here is who something, either the husband, or the cat, throws sugar on the floor !!! I yell! The cat is yelling! The husband rushes about after a broom, then behind a mop, the cat rushes about - helps, and all this happens in my five-meter kitchen! !! In short, as a result, I did not mix sugar and almonds neatly, but hammered them in with a mixer !!! Everything settled down !!! Well, horror! Almonds are already in there, throw it away! both ... kicked out of the kitchen ... took out three more squirrels, beat them ... and carefully mixed them with muck with almonds, then everything was according to the recipe)
  • 4. Put half of the protein mass on the dough, cover with gooseberries, and place the remaining mass on top.
  • 5. Roll out the strips from the remnants of the dough and close the pie with them in the form of a lattice (I cut out the chicks with molds)
  • 5. Place the product in an oven preheated to 200 degrees and bake for 40-45 minutes.
  • PS And in 15 minutes my SEVEN !!! proteins kaaak began to shove up !!! And they torn all my beauty, you bastards !!! After taking it out of the oven, the cake settled flush with the sides. As a result, inside it turned out not a meringue, but a delicious wet cream with berries on a sandy basis, on top of an appetizing hard crust. I strongly suspect that it should have turned out differently ... I didn't even want to put the recipe here ... But the cake is so beautiful and tasty that I decided to give up and put it as it is ...
  • This was not the end of my misadventures ... I was going to take a photo of a piece in a cut - the battery of the fotik sat down ... I charged it for several hours, crawled to the cake - the fotik said that there was no more room in it ... my daughter took the flash drive away, put it on the computer too I can’t ... actually, a pipe !!!

So, during the baking process, he himself settles down to the middle of the almond layer, or even to the base. But part of it manages to catch on top of the crust and looks beautifully after baking, while preventing the almond mass from rising up like a dome and "blowing up" around the edges.
Everybody loves baking with gooseberries, I always freeze it for the winter (and from
frozen berries can do a lot).

Once again I apologize, but despite the respect for Lagutina, I would put no more than 200 g of berries on this number of ingredients. Then the almond mass will definitely retain its airiness.

In general, everything is without incident, I can't look at the cut, because I baked for relatives. By the way, I didn't put the whole gooseberry, I just put it in one layer and it's not tight, 200 grams and it's gone. So there's one more pie left. I will certainly create more for us in this version.
