Ingredients

flour c. from. 500 g
powdered milk 30 g
water 200 ml
milk 60 ml
St. yeast 6 g
salt 7 g
syrup 15 g
ghee 40 g
saffron pinch

Cooking method

  • Dough:
  • 250 g flour
  • 30 g milk powder
  • 200 ml of water
  • 6 g yeast
  • Dissolve the yeast in water, combine with dry ingredients. The resulting mass in consistency is like thick sour cream. Leave for fermentation for 2.5-3 hours at t 28-30 degrees (until it increases by about three times).
  • Dough1:
  • 150 g flour
  • 60 ml warm milk
  • 7 g salt
  • all dough
  • Combine all ingredients, kneading with a mixer for 1 min. Leave to ferment for 1 hour.
  • Bring the melted butter to a boil, put a pinch of saffron in the hot butter. Leave to infuse and cool to room t. I do this as soon as I put the dough. Saffron, infused in this way, will give "sunny color" and a unique aroma after baking. It is better to use stamens rather than ground.
  • Dough2:
  • 100 g flour + molasses + whole dough 1. Knead with a hook for 6 minutes at medium speed, add oil at the end of the mix. Leave to ferment for 45 minutes.
  • Form two loaves, leave to proof for 45 minutes. Before baking, grease with milk and yolk and cut. Bake at 200 degrees for the first 10 minutes with steam, then lower the temperature and bring to readiness (dry skewer, golden crust).

Instead of molasses, there was honey, and without saffron, then everything was according to the recipe. Because of her crookedness, she did not form bars, but baked in two forms, after dividing the dough into 6 balls (this is the only thing I can sculpt).
