Ingredients

Dough
Flour 250 g
Sugar 100 g
Salt pinch
Butter 125 g
Egg 1 PC.
Filling
Red currants 300 g
Butter 75 g
Powdered sugar 150 g
Vanilla sugar 1 sachet
Lemon (juice, zest) ½ lemon
Eggs 2 pcs.
Cottage cheese 600 g
Curd (pudding powder or starch) 1 sachet
Cream 35% 60 ml

Cooking method

  • Mix flour with sugar, salt, butter. We cut everything into crumbs. Add the egg and quickly knead the dough. Put in the refrigerator for 30 minutes.
  • Wash my red currant, dry it, cut off the branches.
  • Mix the butter with icing sugar, vanilla sugar and lemon zest. Add eggs one at a time. We knead. Add cottage cheese and mix everything well. Then add lemon juice, pudding powder, cream. Beat everything.
  • Preheat the oven to 170about FROM.
  • We grease the form with oil and line it with dough, making sides (from dough). We spread half of the curd mass on the dough, then the berries and on them the second half of the curd mass.
  • Put in the oven for about 60 - 70 minutes. Cool, sprinkle with powdered sugar and decorate with red currant sprigs.

Delicious pie with pleasant sourness.
Curd cream filling is a separate topic. This is where I finally "roamed" with my hand blender. The result is a very light and delicate filling.

Feel free to replace the powder with starch in the same amount - 60 g.
