Green sorrel cabbage soup

Ingredients

Meat broth on veal breast 2 l
(meat 300 g)
Bulb onions 1/2 pcs.
Carrot 1/2 pcs.
Sweet pepper - small piece 1/4 pcs.
Cherry tomatoes red 5-6 pcs.
Potatoes 3-4 medium pieces
Fresh sorrel 250 g
large bundle
Spices for soup 1 tsp
Roasting oil 1 tbsp. l.
Fresh parsley 1-2 tbsp. l.
For refueling:
Boiled egg 1 pc.
per serving
Sour cream 1 st. l.
per serving

Cooking method

  • First, prepare the meat broth. For the broth, we take beef or veal brisket on cartilage, on the brisket we get the most delicious and transparent broth for the first courses.
  • Boil the brisket very well until soft. for 300 grams of meat we take 2 liters of water, dried roots. to shorten the time, I cooked the broth in a slow cooker.

  • Heat the oil in a frying pan, add chopped onions, grated carrots, sweet pepper in pieces, halved cherry tomatoes, spices for soup, and fry until half cooked for a few minutes.

  • We shift the vegetables to the broth, add the potatoes (I cut them coarsely, like on fries) and simmer until the potatoes are ready.

  • Now add coarsely chopped sorrel, parsley, salt to the broth and cook for another five minutes so that the soup tastes delicious and rich, turn off the heat.

  • We taste it, adjust it for salt. It is advisable to let the cabbage soup brew under the lid for about 10 minutes - the cabbage soup is ready!

  • Boil hard boiled eggs. I have eggs of home origin and do not want to cook very steep, the yolk remained soft.

  • Pour green cabbage soup into plates, add an egg (cut in half), sour cream.
  • And be sure to serve fresh rye bread!
