Wheat bread with soft cheese and white wine in the oven

Ingredients

Wheat flour 400 g
Semi-sweet white wine - used white Muscat 140 ml
Water 120 ml
Butter 25 g
Soft cheese, like President Brie 60% 70 g
Salt 1 tsp
Yeast 1.5 tsp.
Glucose 5 ml
or 1/2 ampoule

Cooking method

  • I put all the ingredients in the bowl of the food processor and knead a very soft dough.
  • The first proofing in a bowl at 30 * C in the oven until the dough is doubled, cover the bowl with foil.
  • Very good kneading of the dough.
  • Forming oblong bread on a baking sheet, second proofing for about 15 minutes (cover the dough with a bag) in the oven, then transfer the baking sheet to the table.
  • I turn on the oven to 220 * C, heat it up to the desired temperature, moreover, the ceramic plate is heated to the required temperature in the oven. preheat the oven for about 10-15 minutes.
  • I sprinkle the dough piece with flour, make several cuts on the dough with a sharp knife dipped in water so that the knife does not stick to the dough every time.
  • I put the dough on a baking sheet on a ceramic plate in the oven, let the dough bake at a high temperature for about 10-15 minutes.
  • then I gradually reduce the temperature to about 170 * C and bring the bread to readiness.

Note

Interestingly, the dough and dough pieces had a distinct wine smell.
But when the baking was over, the wine smell was gone!

The result is a delicious white bread with a very pleasant taste, the crumb is airy, the crust is very beautiful and crisp, like baguettes!

The loaf is big, you have to show it in parts!

I really like to break the loaves in pieces, and not cut them into thin and even slices! The crumb structure is thus very clearly visible in the break of the bread! The bread was broken off hot, and yet the structure of the bread is clearly visible!
