Tortilla with meat filling

Ingredients

flour 2 glasses
salt 1 tsp
fat 50 g
water 1.2 cups
filling
mixed mince 600 g
bulb 2 pcs
beans 800 g
cumin 1 tsp
chili powder 0.5 tsp
ground bell pepper 0.5 tsp
green onions
lemon juice 2 tbsp. spoons
vegetable oil

Cooking method

  • Pour flour and salt into a large bowl. Chop the bacon very finely and add it to a bowl of flour. Rub lard with flour with your hands until the mixture resembles bread crumbs. Stir in hot water in a thin stream until a soft plastic dough is obtained. Sprinkle flour on a board, knead the dough, then cover with a heated damp cloth for 10 minutes. Divide the dough into 12 pieces, roll each into a ball and then flatten. Roll each flat cake with a rolling pin, sprinkled with flour, into very thin flat cakes (so that the board shows through), trying to maintain a round shape. Put the finished tortillas on a plate, sprinkling with flour so as not to stick together. Heat the skillet vigorously, then reduce heat and lay out with tortilla. Cook for 30 seconds, until bubbly, then turn over and cook for another 10 seconds. Allow to cool before use. For storage (2-3 days), transfer the tortillas with square oiled pieces of parchment, cover everything with foil and put in the refrigerator. Tortillas are used to make burritos, tacos, fajitas, etc. etc.
  • Filling
  • Peel and chop the onion and garlic. fry the onion and half the garlic until transparent. Add minced meat and fry for 10 minutes, kneading the lumps. Season with salt, chili cumin, paprika and lemon juice. Stir well and remove from heat.
  • Fry the garlic in oil. Beans together with liquid, mash with a croutons in a coarse puree, add to garlic and cook for another 7-8 minutes.
  • Combine minced meat and beans. spread over the cakes and sprinkle with onions. Serve with sour cream.

Thanks a lot for the recipe! The cakes are very tender. Started with finely chopped horse meat fried with onions and garlic + canned white beans. Sauce: sour cream + bell pepper + tomato + spices + herbs. It turned out very tasty, but not very photogenic. So no photo report. Thank you!
