Salad with scallops and mozzarella cheese

Ingredients

Scallops 400-500 g
Mozzarella cheese 10 balls
Red onion 1 PC. small
Cherry tomatoes red 6-8 pcs.
Mix salad 2 handfuls
Parsley 1-2 tbsp. l.
Marinade for scallops:
White wine vinegar
(can be replaced with lemon juice)
2 tbsp. l.
Vegetable oil 2-3 st. l.
Ginger grated 1 tsp
Garlic 1 clove
Salt taste
Refueling:
Vegetable oil, salt taste

Cooking method

  • Defrost scallops at room temperature.

  • Heat vegetable oil in a wok, fry the crushed garlic, then discard.

  • Put the scallops in the pan, add ginger, vinegar, salt and fry the scallops for 5 minutes, do not take longer, they will become firm. Stir constantly and pour over the resulting sauce. Remove from heat and cool scallops, periodically pouring sauce to keep them juicy.

  • Thinly cut the onion into rings, pickle in vinegar, add a pinch of salt. Knead with your fingers and let stand for 20 minutes.

  • Combine scallops, mozzarella, salad mix, pickled onions, halved tomatoes, parsley in a salad bowl, add salt to taste and season with a little vegetable oil.
