Ingredients

the foundation:
biscuits 220 gr.
oil sl. room temperature 110 g
good quality cocoa (sieve) 5 gr.
pistachios 30 gr.
for Italian meringue:
water 40 gr.
sugar 180 g
proteins at room temperature 3
for chocolate cream:
dark chocolate 350 gr.
cream 35% 200 ml.
cheese cream type 700 gr.
Italian meringue. which we prepared 250 gr.
white chocolate cream
cream 35% 100 ml.
White chocolate 100 g
cheese cream type 100 g
frozen cherries (defrost and drain well, keep juice) 500 gr.
sugar 2 tbsp. l.
starch 2 tbsp. l.
some coconut flakes (optional)
shape 26 cm in diameter or culinary ring. for portioned ring 6-7 cm in diameter

Cooking method

  • the foundation:
  • grind the cookies with butter and cocoa in a blender.
  • line the crumbs on the bottom of the mold and tamp well. sprinkle the pistachios and press them against the crumb with your hand.
  • bake in preheated to 160aboutFrom the oven 15 min. cool completely.
  • Italian meringue:
  • heat sugar mixed with water until boiling (syrup temperature 115aboutC. if there is no thermometer. then cook for about 3-4 minutes) in parallel, beat the whites until stable peaks.
  • keep boiling syrup until 125aboutC. until a soft ball (drip into a glass of water. The syrup is compressed to form a soft ball)
  • in a tiny stream, without ceasing to beat the whites, add the ready-made boiling syrup and beat until the meringue cools down! it turns out smooth and shiny.
  • chocolate cream:
  • heat the cream to 90aboutC. put chocolate broken by pieces in them and after 1-2 minutes. stir until smooth.
  • combine melted and cooled chocolate with cheese cream and stir well. introduce meringue. mix and beat with a mixer at low speed.
  • apply the ready-made cream on the base of the cheesecake (leave a little for decoration) and place in the refrigerator for 1 hour.
  • white chocolate cream:
  • heat the cream to 90about C and put chocolate broken by pieces in them and after 1-2 minutes. stir until smooth.
  • combine melted and cooled chocolate with cheese cream and stir well. beat with a mixer at low speed.
  • apply the cream on top of the chocolate and put it in the refrigerator again for 60 minutes.
  • dilute starch in 50 ml. cherry juice. add sugar. let it boil and add the cherries when thickened. boil and cool completely.
  • release the cake from the mold. line the cherry with a wreath. sprinkle the center with coconut. you can use grated chocolate.
  • cut with a heated knife.
