Banana cupcake (without butter and eggs)

Ingredients

Ripe medium bananas 2 pcs.
Wheat flour 2 tbsp. (320 gr.)
Sugar 1 tbsp. (200 gr.)
Baking powder 2 tsp (sachet-10 gr.) (the recipe contained soda-0.5 tsp.)
Milk 1 tbsp. (250 ml.)

Cooking method

  • Mash the bananas with a fork. Add sugar to them, mix. Add flour mixed with baking powder and milk alternately. Knead the dough with a spoon or spatula from the bottom up. Bake at 180 degrees until tender (until dry).
  • I baked a cake in HP, the "Pie" program (aka "Cupcake") - 1 hour, 29 minutes (9 minutes kneading and 1 hour 20 minutes baking).

I made 2 alterations for myself on whole flour and stevia - one with bananas, coconut milk, rolled oats and bran, another with apple and cherries, kefir, a little rolled oats and bran. Cranberries and nuggets of cocoa beans were added everywhere.
It tastes different but both are very good. Indeed, they bake for a long time, especially option 2 - a lot of moisture, it takes time to bake.

It's just that there is nothing else sour in the dough and soda alone will not give a reaction with the release of carbon dioxide. I usually use baking soda + citric acid in equal proportions.
