Cheesecake Tears of an Angel

Ingredients

Cheese mass
cottage cheese 1 kg
milk 0,5 l
vanilla pudding (e.g. Dr. Otter) 1 pack
sugar 1 st
yolks 4 things.
eggs 2 pcs.
refined lean oil 4 tbsp. l
Dough
flour 300g
sugar 100g
yolks 2 pcs.
eggs 1 PC.
margarine 150g
baking powder pack 1 PC. (10g)
For the meringue on top of the cheese mass
proteins 6 pcs.
sugar 1 st.

Cooking method

  • Beat margarine, sugar and egg and yolks with a mixer until fluffy. Add flour and baking powder and knead into a soft, pliable dough. Cover the baking sheet with parchment, lay out the dough by hand and distribute evenly over the baking sheet.
  • Grind the cottage cheese in a meat grinder (you can even the day before or before you start the dough), knead it with sugar. yolks and eggs. Dissolve the milk with the pudding into the curd mass. The mass becomes watery. Beat with a mixer, add vegetable oil.
  • Pour the curd mass onto the dough and bake at 170-1800 50-60 minutes.
  • Then beat 6 proteins with sugar until thick (soft peaks) (especially do not try to break the sugar completely) and put evenly on the cheesecake. 15 minutes more until the meringue is brown.
  • Chill the cheesecake in a baking sheet until it cools completely, preferably in the cold, draft. Droplets will appear on the surface - tears.
  • The taste of the cheesecake is very delicate, and a beautiful cut, and it always turns out good and large.

kava thanks for the recipe !! I really love our forum just like that and especially for such a manifestation of complicity!
Yesterday I was completely tired of something, well, I did not understand how to do it. In addition, the batteries in the fotik sat down
And today I came after the service in the church and - it became clear!

Girls, thank you all, everyone for the appreciation of one of the most delicious "smakolikiv" (yummy) from Western Ukraine !! We are very fond of cheesecakes and there are many recipes, some are already on our forum.
Unfortunately, I don’t know the author of the recipe, I received it from my sister as the most fashionable cheesecake, but I am systematically implementing this recipe.
I baked it last night, but today there are no halves, they like something tasty in our family, and I'm glad! Bon Appetit!!
nakapustina
Yes, this is not a cheesecake, it's just holiday Some cake I took away in the bookmarks.
celfh
aola, and what is the size of the baking sheet?
aola
celfh, nakapustina Thanks for the kind emotions, well, just ask what you want, there will be no refusal: D I sit and get high from the praise And everyone runs, looks in and praises too !!
The only thing I don't like is to grind cottage cheese in a meat grinder, so I try to either entrust it to someone, or in my free time myself! And if the cottage cheese is a little more by 200-300 g, it's okay with this proportion, it will be denser and more satisfying !!
The size of the baking sheet is 27x35x4.5 cm, the middle can be removed from me, so the top is slightly wider

This is not a problem, the meat grinder is electric.
It seems to me that it should turn out very tasty: cottage cheese with pudding. Many years ago, I baked a meringue curd pie. It was delicious, beautiful, too, with a tear, but your cake is something
kava
Well, photography is a completely different matter! Excellent cut, all 3 layers are visible. The top in the form of a soufflé is soft in appearance aola, thanks for sharing your recipe

Wonderful recipe, thanks!
Bookmark it!
And if you remove the layer of dough completely ... or make it thinner ...
Very thin. Think I won't ruin your recipe?
Thank you again for the wonderful recipe!

Thank you! This is all dictated by the desire to reduce carbohydrates that are quickly absorbed ... And your recipe is so good !!!

In general, girls, while you are discussing, I already bake. I ground the cottage cheese in a blender into a paste, when I added eggs and poured milk with pudding (milk reduced by 50 g), it turned out quite liquid, but oh well, poured it over the dough. For an hour, the top layer grabbed a little, but gurgled in the "thickest" places. After 55 minutes, she removed and laid out the proteins. In 15 minutes they turned into a soufflé. Turned off ... Now let's cool down and see what happened

No tears appeared, and the soufflé was completely blown away (well, I'm not friends with squirrels, I don't know what they didn't like). I pulled it out of the oven - everything was so beautiful ... It looked like everything looked like aola in the photo I will continue to freeze (the bottom is still hot).

Kava, do not worry. More "tears" will come out. They always appear when there is moisture or under a layer of protein, or the protein itself is not meringue, but a soufflé. And it is not necessary to keep the pie in a draft.
And the soufflé was blown away ... don't you think there is less sugar than in the recipe?
kava
Zhivchik, a glass as in the recipe (chesslovo) I've already had it .. I've had it ... here
Cheesecake Tears of an Angel
Girls, it's not just tasty - it's VERY VERY DELICIOUS! Very gentle and airy - well, it's very difficult to come off! Be sure to try.
Zhivchik
So what don't you like?
Very pretty pieces.
The soufflé should still fall a little, because this is not a meringue. And "tears" will still appear. Moreover, the weather is damp. Or haven't you had any rain?

Hurrah! kava
Another confirmation that you need to cook cheesecake

Girls, the truth is so bitter that these copies in the photo I have already sentenced everything ... I'm waiting for my husband to come home from work - he will help to play up. It will rain with us, too, and it's cool (it's just good to play with the oven)

Yes, the cheesecake turns out to be quite large (like "Air Snickers")

Girls, good afternoon everyone !! I am glad that you all are delicious and thank you for the praise of the recipe !!
I just thought if I put the fruit in the curd mass, how will it be? Nobody tried it?, I will only be able to experiment in 2 weeks
nadin123
I just wanted to say about fruit. Canned peach is very good.
Rita
We sell similar cakes, just with canned peaches. Yummy!

nothing if I put in 5 kopecks? I have Dr. Etker baking powder, 8 grams.

metel_007
I made it the day before yesterday. I just saw the recipe and fell in love with it. Did half the portion. The form is split with a diameter of 26 cm. The pudding really poured out the whole pack. I had 9 grams of baking powder, I poured it all out. It turned out very tasty and very beautiful and with tears! Sfotala and accidentally deleted. I want to say that half of the portion is a full-sized cake.
Uraaa! I remembered that you can restore from the basket

celfh Thanks for the tip about the baking powder, I also Dr. Etker, I use 8 grams, I like this brand I recently tried Tiramisu from Dr. Otker (Etker? how is it right?) Well, homemade from Lilyok was better!

Somewhere even Oetker writes. Apparently, someone like it
I bought a Tiramisu p / f from Etker in Ukraine. But after I made tiramisu from Chuchelka, I do not want any other products. Chuchelka's recipe is super, like the description of the recipe itself

If for a full portion, then I think you can put the whole pack. I have half a serving and 9g baking powder. I did not notice anything negative in this.
Zhivchik
Why do you have different weights of Dr. Oetker baking powder?
I have 10 g and this one

Cheesecake Tears of an Angel
NataliaK
Zhivchik, and in our village there are only two baking powder firms: Eco and Seasoning, both 18g per 500g of flour, which is why every time I am in a stupor, if you do not write exactly how many grams you need in the recipe
metel_007
I had home made (soda + citric acid + flour)

You are not alone. Me, too, a similar measure in recipes enters into a stupor and bewilderment. In different villages, and even more so in countries, packs may be different, and not only baking powder.

I have a question, if there are no puddings in our village, do I need to make the yolk custard myself? Will such a replacement go? Or else there is in stores Custard in briquettes, diluted with water and cooked. This is it?
Lisss's
Lozja, pudding is a dry mixture like that. there in the composition Wait I'll say that:

cornstarch, two flavors, and two colors

so I would replace the pudding with the same amount of cornstarch, my weight is written on the pack 40g.

here he is, pudding:

Ha, as if you can find cornstarch in our village! What else can you replace?

Thanks for the info!
Lisss's
in our village it was not there either, and then it appeared in the ATB supermarket chain .. maybe you have one? and I did not notice him, it was our forum member who suggested to me

I don’t even know what to replace it with - it’s different, not like a potato ..

Lozja hi, where are you from? Pudding can be replaced with Polish puddings, Budun for example, or other puddings, I think this business is in all villages of Galicia

Girls, about baking powder 1 pack = 10g. I'll fix the recipe now
