Lobio or beans in Georgian (with nuts)

Ingredients

dry beans 1 st.
bulb onions 1 PC.
shelled walnuts 1/3 Art.
parsley, cilantro, basil, taste
garlic 1 clove
vinegar, salt, red pepper, spices taste

Cooking method

  • Lobio is a tasty and satisfying snack (snack). It is good hot, and especially cold as an independent dish and as a pasta for sandwiches.
  • It is better to take "colored" beans for this dish, but it will turn out tasty also from white beans. Most importantly, it should be thin-skinned (I always ask sellers).
  • Soak the beans overnight, drain the water and cook. After 5-10 minutes of boiling, drain the water, pour in fresh water so that the beans are covered by about 2 fingers. I do this in order to remove (reduce) the side effect of eating legumes.
  • Finely chop the onion and sauté in oil until lightly browned.
  • Grind the nuts, add finely chopped (crushed) garlic, a little wine (apple) vinegar, salt, pepper to them and grind well. Here I also add a pinch of hops and utskho-suneli.
  • When the beans are cooked, pour the broth into a separate bowl (useful), mash the beans with a crush, add browned onions, nut dressing, mix and dilute with the broth until the consistency of sour cream.
  • Put on low heat, season with finely chopped herbs, bring to a boil. Taste for salt. The dish will thicken after cooling.
  • Everything, the dish is ready!
  • You can cook beans without nuts. The cooking method is the same.

Note

LOBIO is the common name for traditional Georgian dishes made from boiled beans. A variety of flavors is achieved by adding different seasonings to the same base, but as a rule, onions, vegetable oil and wine vinegar are included in the dishes.

Of course from red, and the redder, the better and more beautiful. In Georgia, white beans are not on sale, only such small burgundy beans, very tasty.
I propose this for lack of the right one. Also, by the way, it turns out very decently (butter or sugar varieties), but not so beautiful.

Girls made beans. I warmed everything up, prepared a crush ... And my husband came to dinner. I quickly added canned mushrooms and cut, peeled, tomatoes to the beans. Of course, this is not lobio. But very tasty. So, lobio will still do it!

I do it a little differently: I cook the beans until cooked, sauté the onions in a large amount of vegetable oil, grind the nuts and herbs in a blender (usually only dill), then add the boiled beans in parts and break everything until smooth.I no longer cook (!) I bring it to a puree state by adding not a decoction, but vegetable oil (including with browned onions), in general, 5-6 tbsp. l. oils (together with onion sautéing), salt and pepper to taste. I don't add garlic, because I often take such sandwiches to work

Cook until tender. The fastest-cooking beans are cooked for an hour and a half (with soaking). Usually 2-3 hours.

If you like Georgian cuisine and you are preparing (or are going to cook) dishes of this cuisine, then you should buy loose spices at the market. There they will tell you which ones for what. You can't compare with the store ones.
