Note

Maybe we already have such a recipe on the forum, then the moderators will delete this one. I have not found. I opened it in my old notebook. I like it because you can dispose of a large amount of cottage cheese with a relatively small amount of flour.

The muffins are very tender, so I do not recommend baking them in a large pan.

She brought a fat ivy from me and from my neighbor. I baked it from homemade cottage cheese, just pulled it out, a neighbor came in. treated, left. Came in 5 minutes later for a recipe
aunty3
Good evening! Tell me please, don't you need to extinguish the soda? Thank you!
Omela
aunty3 , welcome to the forum!

It is not necessary to extinguish the soda. It is extinguished due to the acidic environment of the curd.
Feofania

How strange, such a large forum, a sea of all kinds of recipes, and for some reason I always only catch mistletoe recipes. It somehow happens by itself. Lo and behold, I am rewriting again some delicacy from the Mistletoe that is harmful to the figure.

Oh, I have these goodies in stock !!!

Omela, decided to bake according to your recipe. And alas, it did not work out ... In the oven they rose well, and before pulling out they dropped to their original state. They look like delicious cheesecakes, not muffins, edible and tasty. Perhaps this is due to the not very dry cottage cheese? It was necessary to add more flour. But next time I'll fix it.Curd muffins "Air"

do not worry, very pretty roses turned out
With the development of silicone in an ordinary gas oven (without convection and any bells and whistles), I also have different incidents. Either cottage cheese, on the contrary, is liquid, then some kind of poorly rising flour ... but nothing, patience and work, as they say
tatjanka
rusja, thank you for your support. I'm not worried anymore, I know my mistake. Now the main thing is to keep them until the evening, otherwise I go and try a little bit
rusja
Do you also have a gas oven? I seem to set a small temperature of 180-200 gr. and grease pods. mold butter and the bottom of the cupcakes still burns
tatjanka
Fortunately, I bought an electric oven and am not overjoyed, although there is gas in the house. I made these muffins 180 *.
Omela
tatjanka , dont be upset! Curd baked goods are, by definition, very capricious. The dough here turns out to be liquid, pouring. And what did you do? Whipped with what? What you described:

They rose well in the oven, and before pulling out they dropped to their original state

Usually occurs when baking at high temperatures, that is, the dough does not have time to bake. But you say that the temperature was 180C.
tatjanka
Omela, my dough turned out just like that, here the cottage cheese seemed to be too fresh and fat-free. Yes T = 180 * and baked for about 40 minutes until the desired crust color. Yes, I'm not upset anymore, I will definitely achieve the desired result. Until then ...

So there are no handsome men already. A double portion was in the way ... Two pieces of my husband are waiting from work, I sentenced one with coffee. The rest of the daughter and her friend took them upstairs, they just gave the dish .. empty ..
For me, this is an indicator, my daughter DOES NOT EAT cottage cheese in any form. Hee hee, stabbed

Omela, good evening . Yesterday the muffins were baked - this is something !!! I got 11 pieces. - the first 6 pcs. ate in 2 minutes. The rest 5 pcs. straight hot, the husband and brother took away with them (they stood over the soul until they were baked). She also received a reprimand - why so little. I didn't have time to take a picture, and so they stood "above my soul". I'll bake some more on Monday, just make a double.
Omela
Tatyana81 , HOORAY!!!!! I am very glad that you liked it !!!!
tar
and at first they rose, and then fell completely,: cray: tasty, but not beautiful. I will try again
Omela
tar , it's a shame! Baking with cottage cheese is generally very capricious !!!

I have a similar situation. They began to rise, well, the cap, and 15 minutes before the end, the roof began to fall off and even a little sunk. Maybe the problem is that you did not use dry cottage cheese and did not dry the raisins? Maybe moisture played a role?
Omela

moby , I don't dry the raisins either, I just blot them with a towel, but the moisture content of the curd matters, as well as its quality. Try it with a different curd.
moby
Yes, another question ... That for the first time, that now (again I bake) the dough, in general, does not turn out to be liquid, even embossed during kneading with a mixer - traces of the blades remain and last for some time. Thick, add another egg ... maybe wrong. Or I wanted to add a couple of spoons of hot milk. We can of course dry flour, I don't know ... but something like this.
Omela
moby , in fact, the dough is not thick, even more to the liquid. Maybe it’s all the same in the cottage cheese ??? Try to put less flour initially.
moby
I baked it, the roof fell again, the cottage cheese was Lithuanian, and I took another one. But to the taste, it’s just BALD. Well, how airy, gentle. I will bring it to perfection, very tasty. Thanks for the help!
Omela
moby , climbed by intuition .. try to change the technology. First, beat the eggs with sugar, then add the cottage cheese, melted butter, and not beat the flour, but mix at low speed. And bake with a bowl of boiling water in the oven. ( 🔗)
moby
So many problems because of me, thanks !! I'll repeat it tomorrow
moby
I baked it using this technology, I liked the result much more ... I put less this time. Maybe the problem was that I put more than 3/4 dough in the forms? Maybe the severity of the test? No hollows.
Omela
Uffff. Maybe the severity. The main thing is to find your technology and okay !!!
agolubka
An interesting recipe. I'll put it in your bookmarks.
Can you please tell me in which forms it is better to bake - silicone or tin? And whether it is necessary to grease before placing the dough.
Omela
agolubka , I have silicone, do not lubricate.

Bake in an oven preheated to 180C for 50-60 minutes until the desired degree of browning.

And 50-60 minutes of baking is not a lot?
And another question about silicone molds - are they not harmful to health?
None of them stand out in baked goods?
Thank you.

yalena , focus on your oven. Not much for mine.

No, silicone is absolutely harmless. But you can use any form you have. Good luck!
yalena
Thanks for the answer, I have metal molds (rusting)
But I can't make up my mind to silicone, although I understand that it is much more convenient ...
