Tunisian flatbread on semolina

Ingredients

Fresh yeast 11d. (1.25 h. L. Dry)
Semolina 165g.
Wheat flour 165g.
Sparkling water (not salty) 150g.
Olive oil 50g.
Salt 1h l.
Sugar 2h l.
For lubrication:
Egg 1 PC.
Sesame seeds for sprinkling

Cooking method

  • Grind yeast with sugar (dry mix with flour). Load into HP according to the instructions. Dough mode. I stirred in the combine for 7 minutes. Leave the dough until doubled. If you use HP, wait until the end of the program.

  • Put the dough on the table, knead, form a cake. I kneaded the cake right on a baking sheet covered with paper. The height of the cake is 2.5 cm

  • Cover with a towel and let rise again for 40 minutes.

  • Before baking, grease with a beaten egg, sprinkle generously with sesame seeds and make a few punctures with a stick so as not to swell when baking.

  • Bake in a preheated oven at 180C for about 30 minutes.

  • Tunisian flatbread on semolina

  • Delicate crumb with a crispy crust.

True, it was not without a gag ... I had rice flour lying around, neither here nor there, I was tired in general ... It turned out that I had half rice flour and half wheat flour in my dough ..
And the same thing with milk ... It was a pity to pour it out, in general, in my milk. True, maybe because of the rice flour the dough was tight, well, then I poured more water on the bun straight from the kettle (I don't know how much ... Maybe a couple of tablespoons.) And I didn't pierce a hole before baking, on the contrary, I like it when it rises bread high
