Ingredients

Whole milk 250 gr.
Fresh yeast 15 gr.
Wheat baking flour 500 gr.
Unsalted butter at room temperature 60 gr.
Fine granulated sugar 40 gr.
Salt 10 gr.
Eggs 2 pcs. large

Cooking method

  • I make the dough in KhP, the "Yeast dough" program (25 minutes kneading + 1 hour proofing).
  • With the rounded side of a scraper, place the dough on a lightly floured surface and divide it into small pieces of about 30 g each. each. Roll tight balls out of them. Lightly oil and dust a baking sheet with flour. Place the balls on it with the seam downward at some distance from each other so that they do not touch when lifting. Cover the baking sheet with a towel and let sit for about 45 minutes, or until the balls have almost doubled in size.
  • Pour oil into a 20 cm frying pan. (If the pan is larger, the butter will be spread too thinly) and put it on medium heat. When the oil warms up (the desired temperature - 180 degrees - it will reach in about 15 minutes), pick up the first donut with a spatula with holes and carefully dip it into the oil. It should immediately hiss. Add donuts until the pan is full (I never put more than 5 at a time). Roast for 30-45 seconds, until the donuts start to darken, then turn them over and fry on the other side for another 30-45 seconds. Use the same omelet spatula to remove the donuts from the butter and pat dry on several layers of paper towels. Cool it down.
  • Then donuts can be simply rolled in fine sugar. If you want to fill them with something, use a pastry bag with a fine nozzle. How tight you will fill, decide for yourself!

20 minutes + 45 minutes proofing + 15 minutes baking

pira_to4ka, of course you can.
15 gr. fresh = 5 gr. dry (this is about 1.6 tsp (meaning measuring spoons, from HP)).
This dough turns out equally well with both fresh and dry yeast !!! Replacement of yeast will not affect the quality of the dough or the taste of finished products, do not worry.

In the morning I laid it out on the table - it spread over the table, because it was thinner than on the pancakes. According to the recipe, you need to roll up tight balls, grease with butter and sprinkle with flour, but it is impossible to “roll” this slurry. I put the dough in the mixer again and added a decent amount of flour. It seems to have thickened. Now I'm waiting for the dough to rise .. Ooh, while I read other recipes - almost half of the amount of flour in all milk - so my mistake is that whey dilutes flour more than milk? I'm afraid I won't have tender donuts, but tight rolls? .........

Proofing was done in a cold muffin bowl. I counted the dough for 150 grams of flour. Knead it in HP, put it in a mold and let it rise. Baked for 15 minutes, 10 minutes off, 10 minutes baked.
