Ingredients

Wheat flour 500 g
dry yeast 6 g
cottage cheese 200 g
softened plums. butter 80 g
sugar 60 g
eggs 2 pcs.
salt 0.5 tsp
grated lemon zest taste
For lubrication:
yolk 1 PC.
milk 2 tbsp. l.

Cooking method

  • Sift the flour through a sieve, mix thoroughly with yeast, cottage cheese, butter, sugar, 2 eggs, salt and zest. Knead a plastic dough. Divide the dough into 12-16 pieces of the same size, form small circles from them, put them in one layer in a greased form. Put the form in a warm place and keep there until the cakes double in volume. Beat the yolk with milk. Lubricate the tortillas with this mixture, sprinkle with granulated sugar if desired. Place the dish on a wire rack in a preheated oven to 200 degrees, for about 20 minutes. Serve the tortillas with stewed fruit or vanilla sauce.

I looked at all this in a basin, scratched my turnip to see that there were only 2 eggs in the liquid, what should it mix with? Well, I started. I tried, tried to collect all this crumbs in a heap, then gave another spoonful of sour cream, again tormented to no avail. And, I forgot to say, I still did not give all the flour at once, but only 400 g! I threw it into the harvester, he somehow collected the dough in a heap and kneaded it a little, felt it - however harsh. I added a little more cottage cheese whey, kneaded it, added another 20-30 grams of flour, and it seemed like then I got a normal dough. Now the buns are being parted.
Attention, the question is, where did I miss? Or is it really all the difference in the consistency of the curd?

I also had homemade cottage cheese, well wrung out, so the dough was also very steep ... But, I did not add liquid, I wanted to check what would happen if I did not deviate from the recipe. I crumpled it well on the table with my hands - the dough became elastic, but still tight.
