Batbouts - miniature Moroccan tortillas

Ingredients

Kefir 200g.
Fresh yeast 10g.
Wheat flour 300g.
Salt 1 \ 4h. l.
Sugar 1h l.
For lubrication:
Egg 1 PC.
For sprinkling:
Sesame

Cooking method

  • Warm up kefir. Grind yeast with sugar and mix with kefir. Add flour and salt. Knead the dough. I kneaded in a food processor for 7 minutes.
  • Divide the dough into 2 balls. Roll each into a layer, 4mm thick.
  • Cut out circles with a glass (5-6 cm in diameter). I got 25 pieces.
  • Place the circles on a baking sheet lined with paper. Cover with a towel and leave for 20-30 minutes (depending on temperature) to rise.
  • Brush with beaten egg and sprinkle with sesame seeds before baking.
  • Bake in an oven preheated to 220C - 15-20 minutes until golden brown.

  • The recipe is a lifesaver when you need fast, tasty and original bread. Children like it very much - checked !!! Recommend!!! The only problem is that it is eaten as quickly as it is cooked.

Note

In general, I bow to the Moroccans, because:

Batbuts are small Moroccan flatbreads, similar in appearance to pita bread, but differing from them in the way they are baked and in size. They are baked in a hot skillet with a thick bottom.

My changes: kefir instead of water, fresh yeast instead of dry yeast, and baked goods in the oven instead of a frying pan.

I baked it in the evening, I woke up in the morning, I didn't eat porridge, bounced on a chair and shouted "Mamaaa, beeches !!! Give it."
In general, they ate, chewing the last, my husband said it would be necessary to repeat it.

My identity is now "hooked" on them. I really do it with one big batboot. And I give time to rise the dough for about 30 minutes, and only then I form a cake. This makes it even more airy. I bake every day.

I did everything with sesame seeds, and then sprinkled one half with grated cheese, and the other half with chocolate icing (some marshmallow in chocolate got the wrong one - all the icing fell off of it ... so I attached it). I managed to select only two chocolate ones ... and the small round ones are the middle of the bagels ... I wanted to smear them with fondant and did not have time, they were the very first hot ones that disappeared ...
fast, easy and delicious.

My sample of the batboots was eaten sooo fast. Only I blinded something of 32 of them from the specified recipe - it seems to be a little, but still 25-24 is better - they will be more puffy. It tastes salty, and you don't notice how you eat it, and they smell like kefir. Om-Nom-nom.

The bread, of course, is less rich than cakes with kefir - less sugar and no oil at all in the recipe - but much more "bread", the smell in the house is incredible Didn't expect from such a simple recipe ...
I diluted kefir 1: 1 with water, somewhere I read that kefir and milk for bread should be diluted. Everything else is just like you. Fast, simple - MIRACLE !!!

But, the youngest first-grader got sick and demanded donuts with garlic to the borschik, and the senior first-year student called that in 30 minutes she would come running to have lunch and would really like pizza. How can you refuse your beloved children? Of course not. Therefore, the dough kneaded in the "Pizza" mode was divided into 3 parts. I did not have time to make any proofs. The only thing is, I always give the cake to the pizza to bake in the oven for 5 minutes, and then I put the filling and bake it. The pizza turned out great! The cake is thin (we don't like thick) and delicious.
Buns - tender donuts, greased olive oil on top and squeezed garlic. Miracle!
