Quiche with sprats and cherry

Ingredients

Cherry tomatoes 200 g
Sprats in oil 200 g
potatoes 150 g
hard cheese 50-70 g
cream 20-22% 300 ml
eggs 2 pcs.
green onions 50 g
salt, ground pepper
Dough
flour 200 g
butter 100 g
egg 1 PC.
salt 0.5 tsp

Cooking method

  • Cut the cold butter into cubes. Combine flour and salt, add butter and beat with a mixer until the mixture resembles crumbs. Add egg and beat until smooth. Wrap in plastic and refrigerate for 30 minutes. Roll out on a table powdered with flour into a thin layer.
  • Preheat the oven to 180g. line the bottom of the mold with parchment, lay out the dough and cut off the protruding edges. Make frequent punctures with a fork. Cover the dough with a sheet of parchment and cover with dry beans. Bake for 10 minutes, remove beans and paper, cook for another 5 minutes.
  • Boil the peeled potatoes in salted water until half cooked (8 minutes). Drain the water, cool the potatoes and cut into slices.
  • Chop and chop green onions, cut tomatoes in half.
  • Beat the cream, eggs, grated cheese in a large bowl, add onion, season with salt and pepper.
  • Put potatoes and tomatoes on the dough, pour the creamy mixture, spread the sprats on top. Bake for 35 minutes, until the filling thickens and turns golden.
  • It can be served hot or cold.

Note

It took me very little time to cook, because the rest of the dough for the fish pie lay in the refrigerator.

In the recipe, I did not write that it is very easy to get the quiche from the non-separable form. The filling holds so well that I just covered it with a plate, turned it over, put another plate on the bottom and turned it over again. As you can see, everything remained unbreakable
